Easy Spinach Lasagna with White Sauce

Great recipe! I omited the carrots and added sundried tomatoes and bread crumbs on top as suggested by others. Also added some sauted onions and peppers to the spinach and cheese mixture. It was a hit! Thanks!

Baked Zucchini Chips

Baked Garlic Croutons

So simple, so good! I just used the wheat bread we had at the time and added a little onion power to the garlic and oil. YUM! Would be great with soups too.

Spinach Chicken Enchiladas

What a great way to use that frozen spinach in the back of the freezer! Very tasty, very simple. I did add a few things because my family likes their enchiladas spicy: one small can of mild green chilies (some in the sauce, most in the chicken mixture) and some pepperjack cheese inside each enchilada as well. Yummy and healthy too! Even my picky toddler liked it!

Lisa's Chocolate Chocolate Chip Cake

YUM! Made exactly as directed with a devils food cake mix and raspberry/dark chocolate chips in a bundt pan. Took it to a party and it was a HIT - everyone raved over it! I am a dark chocolate lover so the less sweet more rich chocolate flavor was perfect for me. Will probably try using applesauce instead of oil next time. I didn't ice it, but I did dust it with powdered sugar right after I got it out of the oven (because I was running late) and the sugar carmelized a bit and made this awesome crunchy coating that contrasted well with the rich, moist cake.

Run For The Roses Pie III

From a girl who was born and raised in Louisville, KY, this a darn good rendition of a Derby favorite :) I've tried quite a few Derby Pie recipes and for how simple this is and how good it tastes, this is my new favorite! I don't do alcohol in my recipes, but I did add some pure vanilla as suggested. This was a HIT with family and friends and, most importantly, with me!

Lime Chicken Soft Tacos

This was EXACTLY what I was looking for! So good, quick and easy. Everyone loved it. I poached the chicken in broth and shredded as some suggested and substituted lime pepper for black pepper because I had it on hand. GREAT recipe. Thank you!

So simple and delicious, we make this all the time now. Sometimes we add leftover rotisserie chicken if we have it on hand but it doesn't need anything other than what is listed to be a great dinner.
