Jennifer's Granola
I love this recipe. I do recommend checking after 35 minutes. The first time I made it an hour was too long and it got really brown, although we still ate it and it was good. Second time I only baked it about 40 minutes any longer it would have been too dark. I did add dried cranberries after it cooled. Also, I used part melted Smart Balance butter spread and oil. It's better than any store bought granola.

Summer Potato Salad
Was looking for a lighter potato salad and this is really good. The lemon, I used fresh, compliments the fish we BBQ. Used some red potatoes as well as russet and left on the skins.

Champagne Shrimp and Pasta
Loved this recipe. I didn't have medium shrimp, so used litte bay shrimp. They're already cooked so I just added them when the sauce was done. My husband loved it and wants me to make sure to save the recipe. Did add a little garlic to the champagne. Used 1/2 and 1/2 because I didn't have heavy cream and was a little runnier, but still very tasty.
