Down Home Macaroni and Cheese

I liked this mac n cheese, but I have had better only because I don't typically like baked macaroni. Nonetheless, I am going to keep this recipe and make it again.

French Toast I

This is just like how I have always made French toast. The only difference is I use less milk to reduce sogginess. My son LOVES this!!

Wild Rice and Asparagus Chicken Breasts

I didn't have peanut oil so I used sesame oil instead and added 1 tsp of peanut butter to the sauce. Also, I used broccoli instead of asparagus. My 2 yr old LOVED it and even my picky 8 yr old said it was good and he doesn't like anything I make. I have also made this with salmon (I just used a pouch)and the kids still thought it was chicken. I will make again!

Chicken Tortilla Casserole

I printed this recipe years ago when it called for green chilie salsa, but I just made it for the first time and the flavor was wonderful! I found the casserole to be too "soupy", in fact it reminded me of chicken tortilla soup. The next time I will reduce the amt of liquids and increase the tortilla strips.

Eggplant Salsa and Homemade Pita Chips

I didn't care for this salsa. It was way too much trouble to make and it tasted rather bland. Also, the pita chips did not crisp when cooked. Tasted better with tortilla chips.

Best Fried Green Tomatoes

I used seasoned bread crumbs like others mentioned, but I thought it was too overpowering for these. If I made again I would use plain bread crumbs and add my own seasonings. Otherwise, these weren't too bad.

Tacos De Matamoros

If this is what "authentic" tacos taste like, then I will stick with the fake ones because I like flavor. When the meat and seasonings simmered in water for an hour, all of the potential flavor evaporated. I guess I just expected this dish to be better, but it just didn't impress me.

Jazzy New Orleans Chicken

Carrot Souffle

This was the 1st time I had made a souffle and it was perfect. I did what one reviewer suggested and blended everything in a food processor to smooth out the carrots, but I did not reduce the sugar and it turned out just fine. I will make again!!!

Tuna Noodle Stew

This recipe was just what I was looking for. I had to change a few things due to lack of some ingredients. Here is what I did: instead of cream of celery soup, I used cream of mushroom and added diced celery. I used 1/2 a can of peas, minced onion. Also, after I drained the tuna, I sprinkled onion powder and black pepper on it to let some flavor soak in before I used it. When I added all of the ingriendents to the pot, I sprinkled more onion powder and black pepper to the mix and used about a 1/4 cup of milk. The flavor was wonderful!!!!

Spicy Mexican Salad

Super Sloppy Joes

I LOVED these sloppy joes! I thought these were some of the best, most flavorful I have ever made. I did not have celery or crushed tomatoes so instead I used celery salt and diced tomatoes with mild green chilies, respectively. I will make again!!

Potato Pancakes II

My husband said right away that this recipe was a "keeper." I made instant mashed potatoes and then immediately made these. The only problem I had was trying to turn them over while at the same time keeping them together. The next time I make these I will make them smaller so they are easier to work with.

Zippy-Zoo Marinade

This is a rather thick marinade. I used it on chicken and then my husband cooked it on the grill, or over-cooked rather and the flavor was kind of burnt off. What I did taste of it was very good. I would recommend not using this marinade if you are going to cook your meat on the grill or else you can double it to make enough to use for basting as it cooks which I probably should of done.

Restaurant Style Mac and Cheese

I love the fact that this is no-bake mac n cheese. I had to double the recipe for more servings and found it to be a bit dry. I kept having to add more cream. Otherwise, the flavor was great.

Butterscotch Brownies III

These brownies were fabulous. Perfect combination of sweet, salty and buttery. You can't beat that. We ate the whole pan in a matter of hours. A keeper!!

Poppy Seed Dressing II

I would rename this dressing to Onion-Poppy Seed Dressing II. I only used a very small part of an onion, but it was way too much for this. Granted, I used a white onion. I would only recommend using a SWEET onion for this recipe. Otherwise, this dressing wasn't bad.
