Bobbe's Super Cheesy Pasta

Reviewed: Apr. 27, 2006
Yummm! Easy one pot pasta dish. We like a lot of sauce so rather than messing with the amount of cheese for the first time making the recipe, I simply skimped a bit on the amount of pasta (probably 12 oz). It was perfect. After the cheese melted and was evenly distributed, I had my doubts about what would happen when I added the very liquid blue-cheese dressing & milk, but I added it gradually as instructed and it coated the pasta and made a very nice creamy sauce. Rigatoni is the perfect pasta shape for this dish.

The Meatball that Fell Off the Table

Reviewed: Feb. 8, 2006
WE HAVE A WINNER!!!! I’ve only made meatballs a couple times in the past 15 years of marriage, mostly because *I* don’t like them even though it is one of hubby’s favorite meals. I wanted to make a special meal for him and I tried this recipe. The meatballs turned out great; I even ate 2 of them. The only real difference was I made ours with ground venison (we have a lot of it in the freezer this time of year).

Cardamom Bread

Reviewed: Jan. 4, 2006
I tried to make this bread exactly as written, except using my heavy-duty KitchenAid mixer. After 4 minutes of mixing with the dough-hook, there were a lot of dry crumbs not being incorporated into the dough, so I added ONE Tablespoon additional evaporated milk. That did the trick and after another 4 minutes it was a nice firm ball of dough. The bread tasted wonderful. I had my doubts when I got a strong whiff of the Cardamom when I added it, but it turned out to be just the right amount for a delicate, peppery-sweet, tea bread. I might add a bit more sweet next time.

Bacon Chicken and Dumplings

Reviewed: Nov. 3, 2005
Wonderful, especially with a few modifications. Used 1/2 lb of diced bacon and used chopped celery and carrots instead of the corn. However, if you use Bisquick for the dumplings, be careful, the recipe on the box would translate to requiring closer to 1/2 a cup of milk (rather than a full cup) in order to come up with the right consistency of dough. Next time I’ll probably use closer to 2 cups chicken broth and 2 cups half-and-half. It was very soupy, but delicious anyway.
