Blueberry Coffee Cake

It's important to let the ingredients come to room temp. I mixed the cream cheese with the butter & sugar so that there wouldn't be chunks of cream cheese. This recipe is a great basic coffee cake that worked at high altitude with no adjustments (8,300 ft). great with a lemon/confectionary sugar icing.

Spanakopita (Greek Spinach Pie)

Great! Used about 1 lb of baby spinach and an extra garlic clove but changed nothing else. Will add this to our menu rotation.

Philly Cheesecake

Restaurant style cheesecake, not too sweet. Came out perfect! I increased the cream cheese to 16 oz. Baked as directed for 90 minutes then turned off oven and left the cake in an additional hour.

Soft Chocolate Chip Cookies II

This is a very sweet cookie, if I make again I would reduce the 3/4 cup of brown sugar to half cup. Taste is a litte flat, I prefer a buttery cookie to this. Take them out of the oven before they brown to keep them chewy, they do cook quite nice and hold their shape.

Sean's Falafel and Cucumber Sauce

Very, very good! I didn't have breadcrumbs so I used cracker crumbs and it still came out fabulous. I used the food processor to blend the onion, parsley and garlic. I was a little nervous about putting in too much cracker crumb so they were not as firm as they could have been, next time I won't be so shy. The cucumber sauce was perfect as well. I'm sharing this one with my vegitarian friends.

Spinach Stuffed Chicken Breast

Really good on the GRILL! I did change the recipe slightly by: marinating the chicken in Newmans Balsamic/Oil dressing for about 15 min. Wilting the spinach only took about 20 seconds in my microwave, the spinach will wilt if it's damnp you don't need to add water, in fact if you do add water to wilt it make sure you squeeze it dry before mixing in the sour cream/cheese/garlic/pepper. I used cheddar instead of pepperjack, added 1/8 C pine nuts and added the cooked bacon to the stuffing (although I'm not even sure it needed it), used less garlic cause the cloves I had were huge. Also, I put it on the grill instead of in the oven for about 12 min. and it came out perfect. It may take more or less time on your grill, watch it cause you don't want to over cook the chicken. The presentation of this dish makes boring chicken a meal you'd serve to guests!
