Creamy Veggie Fondue

I made this for a group of friends and they LOVED it-- not a drop left at the end of the night. I served it with apples, bread, mushrooms and broccoli. Will definitely make again. Just the right consistency-- not too thick nor too thin. Had to put out the fondue flame though-- was scorching quickly. It didn't last long enough to get too cold, though!

Smoked Salmon Spread

I just made this for a party and several people really raved about it and wanted the recipe. Easy to make, too! I doubled the worcestershire and hot pepper sauce. Also, I didn't have fresh dill or green onion, so I used dried dill and dehydrated onion flakes. Thanks for this recipe!

Homemade Black Bean Veggie Burgers

Quick, easy to make and super tasty! Thanks for the recipe! I made this for a south beach dieter without the flour and it worked fine. A little mushy to get onto the cookie sheet, but firmed up nicely with baking. We topped them with some shredded cheddar, salsa and a little sour cream. Yum.

Hungarian Mushroom Soup

We made this at a dinner party for friends and it was maybe the favorite dish of the night. Delicious, easy, quick. We doubled it and used oyster, button, portabella and baby bella mushrooms, all in nice big pieces. Really awesome. We had it ready up to the last step, and let it sit on the stove on very low heat. At the last minute, we added the final ingredients and heated through. Worked great.

Indian Chicken Curry II

This recipe is the bomb. It has become our standard curry recipe and we make it pretty often. Guests always love it. It's pretty spicy as written, so decrease the cayenne unless you love it really hot. We love spicy, but full strength, it's a force to be reckoned with.

Summer Celery Soup

I had a bunch of leftover celery that I didn't want to waste and wanted to make a celery soup without a bunch of cream. I found this recipe and it was really great. I did not find it too lemony at all. The small amount of red wine really gives it some depth. Very good. Used dried spices as that's all I had.

Tuna Stuffed Zucchini

This was pretty tasty & easy. I pureed the zucchini flesh in a food processor -- easier than mashing I think. Also, I used quinoa instead of flour, then added a little almond flour because the filling seemed too thin. The texture was great. Great way to use zucchini as a main dish. It was a little bland- I think I undersalted it. Improved with more salt & a little hot sauce on the side!

Spiced Butternut Squash Muffins

I thought the flavor of these was great. I didn't have pumpkin pie spice, so I used the combination of nutmeg, cinnamon, ginger, allspice and clove that another reviewer suggested and that worked well. I replaced the sugar with agave syrup and the flour with almond flour. Taste wise, that worked well, but the middle stayed a little mushy. I'll try that combo again, and tweak the amounts. Oh, I also decreased the oven temp a little and baked longer so that they wouldn't burn with the changes I made. Will definitely try again- really tasty.
