Quinoa Chard Pilaf

This was pretty good. My first bite I thought it was a little weird, but as I ate it I got kind of addicted. I made a half recipe and ate a lot of it. I added a little more onion and garlic than it called for. I also used 1/2c dry lentils and added 1c water to the quinoa/broth mixture instead of canned lentils. It turned out great. Seems like the people who are accusing it of being bland may have been the ones who subbed spinach for the chard - the chard adds a bit of a bite. I also added both salt and pepper. I made salmon with it, but didn't serve it with the salmon because it wasn't done in time. Good on it's own! I'll probably make this again.

Roasted Potato Pizza Slices

I decided to try this because I had a ton of potatoes and pizza sauce to use up. I didn't expect it to be very good but I was so pleasantly surprised! I eat gluten free so I'm always on the lookout for dough alternatives. This sounded like someone's attempt to make something for a person with allergies...which usually doesn't turn out well...but this was great. I'd recommend cutting the potatoes a little bit thicker, otherwise they fall apart. Fast, easy, and yummy! Much easier than making dough at home, and I'd say just as good!

Dijonnaise Chicken

This was good. I was a little disappointed just because the reviews were so good so I was expecting heaven, but it was fine. It was a good, solid recipe that's easy and the family likes it. It was a little greasy - I think I'll use less oil next time. Also I think I'll cut down on or cut out the bullion as others have said because it was really salty. My only change from the recipe was that I used vegan mayo (because I'm allergic to eggs) and mustard instead of the premade dijonnaise. So, I don't know if that made a difference, but it was still good & turned out really moist.

Simple Southwestern Chicken Salad

This was good - my husband liked it, which is great. I added an extra chicken breast (like others suggested). I also added a can of black beans and some diced tomatoes. I used the same amount of mayo and taco seasoning, and there was plenty - I didn't need to add any more. In fact, I was thinking the taco seasoning was a little too much still. I think I'll use less next time (or add more beans). I used vegan mayo (because I'm allergic to eggs), and it still tasted great. We ate it with lettuce in tortillas & it was yummy.

Pizza Casserole

OK, so...to preface this...I can't eat gluten (wheat) and I'm allergic to dairy...so I didn't make this recipe exactly as written. I used rice milk instead of regular milk, I used brown rice pasta instead of egg noodles, and I omitted the cheese. It was still pretty decent. I baked it covered with aluminum foil so that it would stay moist since I didn't have cheese. It could definitely use more sauce - I think it would need more sauce even if I had the cheese. I saw that some people said that it was just like spaghetti. I guess does kind of have that type of flavor, but I associate pizza sauce with pizza, so anything with pizza sauce tastes pizza-y to me. Use real "pizza sauce" if you want it to taste like pizza, not just tomato sauce. Also, you could add some extra uncooked pizza sauce at the end..pizza sauce loses a little bit of the pizza-ness when it gets cooked into the noodles.

Ultimate All in One Chicken Dinner

I will say that it's pretty easy to make, and it's nice that it's just a one pan dish. However I was really disappointed. I got excited at first because the sauteed vegetables looked really good. But once you simmer it, it just tastes like canned green beans. I really hate the taste of canned green beans. I thought it would be OK mixed in, but it's not. I added a ton of garlic salt and that made it edible, but I didn't like it. Even my 13 month old daughter refused to eat it. It might be OK with frozen beans. And it is soupy, like everyone said, but it kind of has to be in order to cook the potatoes, I think.

Balsamic-Glazed Salmon Fillets

This was an excellent recipe. It looks kind of gross because the vinegar makes it look blackish, but the taste is great. I don't know how they got the picture to look so nice. Anyway, I'd recommend it.

True Love Chicken

This was really good. I halved the recipe and used quinoa vegetable curl pasta instead of the tagliatelle becuase I can't have wheat. I cut the chicken into strips and it still took 35 minutes to cook. However, it was nice and tender because it was slow cooked. I would recommend cutting it up - it makes it easier to eat with the pasta anyway. I also added half a green pepper (because I wanted to use it up). I sauteed it with the onion and it ws really good. My husband liked the dish but said that there were too many tomatoes. I thought the amount was OK, but I think I would have liked fresh tomatoes instead of canned. I think next time I will use fresh and then add extra olive oil to the pasta/veggie mix. I think it would be good with zucchini or spinach mixed in too. But overall, yummy.

Quinoa and Black Beans

Wow - this was excellent. I even forgot to rinse my quinoa and it still turned out good. I would definitely recommend this to someone looking to try quinoa, or even to someone who has had a bad experience with it. It doesn't really need the cilantro.

Southwest Chicken

Yummy and easy. I sauteed onion and garlic in the pan before browning the chicken. I also rubbed the chicken with chili powder, ceyenne pepper and cumin before browning, as others suggested. I am usually not someone who likes spicy things (my husband does, which is why I added it), but the amount I added made it just fine. It would have been bland without it. I also added green pepper. It was yummy.

Black Bean and Corn Salad II

I love this recipe - it has become my new potluck dish. It has a problem sometimes with getting too runny. I sometimes serve it without the dressing. I recommend keeping it cold until you serve it - if it gets warm the frozen corn melts and you get extra water that you don't need. Other than that, it is excellent. It has great flavor and is very colorful.

Chocolate Cherry Upside Down Cake

This was great! I am allergic to dairy and eggs, and I am also not able to eat gluten (wheat, rye, barley). As you can imagine, cake is hard to come by for me. I made this for my birthday & I brought it to work when we were celebrating. I substituted the wheat flour with gluten free flour (Bob's Red Mill All Purpose GF Flour) and a tsp of xanthan gum. I also added dairy free chocolate chips into the batter, and I drizzled some chocolate syrup on the top when it was done. And it was great! It got eaten before the "regular" cake did! (Addition 3 years later) I STILL get requests for this at work - even on other people's birthdays - and people ask me for the recipe all the time.

Best Guacamole

This is a great guacamole recipe! I take it to lunches at work and everyone loves it. I use a little less oil than it calls for, because it tends to get a little greasy if you use the full amount. It's great though! And really easy.

Quinoa Pudding

Vegetarian Lasagna

Maybe I made it wrong, but this didn't have much flavor & wasn't very moist. I made it vegan because I'm allergic to milk, so maybe that's why. I'm thinking it might be good if there were some type of sauce in it - like marinara or something. And the veggies need to be chopped really fine to fit it all in.
