Harvest Rice Dish

Holy moly! Wow. I really liked this. In fact, I'm going to have to put it out of my mind that I have a lot left in the fridge. I can see myself going back for more! I wanted to make this exactly as the recipe says, but wild rice was too expensive (at least in the store I went to). I doubled the brown rice instead. I also forgot to get an orange for the orange zest, so I didn't get that put in, either. All I can say is, if it's this incredible without the orange zest, imagine how amazing it could be WITH the orange zest! I read a few of the reviews before I made it and, since one of the reviews said it was too butttery, I decided to cut back to two tablespoons of unsalted butter and it was perfect. I didn't miss that extra tablespoon. I didn't know what kind of onion to use, so I bought a medium size red onion and it was WONDERFUL! I also used a small can of mushrooms instead of the fresh. I fixed it with Rachel Ray's cheese-crusted chicken tenderloins. At first, the rice didn't seem that it was tender enough, so I put it in a covered casserole and put it in the oven at 275 degrees while I finished frying the chicken. By that time, it was simply delectable. Oh, the sweet tang of those cranberries is delightful! And the crunch of the toasted almonds! This one is a keeper for sure! Carrot Cake V

I loved this cake, but my husband says it tastes too much like cinnamon and not enough like carrot cake. The recipe calls for two 4.5 ounce carrot baby food jars, but the baby food I found came in four-ounce jars. Maybe it's my oven, but I had to bake it at least a full ten minutes longer than the recipe called for. The cream cheese frosting was yummy!

Seven Minute Frosting I

It's yummy, but it seems to take more than seven minutes to get stiff peaks, even though I don't start timing until my water is boiling (in fact, I don't think I've achieved it, yet, and I've made this a couple of times already). I'm getting ready to make it again, and this time I'm going to increase my cream of tartar to a half teaspoon and see if that helps.

Wacky Cake VIII

The only way I can get this recipe to work is to double it. The first time I made it it was way too dry, but it's because the recipe as posted is only half a batch. The pan I put it is was too big and I cooked it too long! If you double this recipe you can put it in a regular size cake pan and it should turn out wonderfully!

Caramel Icing

Excellent icing, excellent! I found, though, that two cups of powdered sugar was too much, so I make it with less. The last time I used a cup. I have an applesauce cake in the oven now (by Corwynn Darkholme--which is a delightful cake), and I'm going to try the icing again with only half a cup of powdered sugar.

Applesauce Cake IV

I found this recipe to be delightful! Perfect just the way it is, but I add black walnuts for my dad's benefit. My husband eats the HECK out of this cake! I've made it so many times I can make it from memory now. It goes GREAT with Bumblebee's caramel icing! With the icing, though, I don't use as much powdered sugar as it calls for.

Easter Egg Nests

Is there really such a thing as white confectioners coating? I asked my sister what it was, and she had never heard of it. She said what was meant was powdered sugar--so I bought that. Needless to say, the nests didn't turn out. When I got home from the store I saw the comment on what confectioners coating was and went back to the store--but that doesn't mean I actually FOUND any. Next time I try these I guess I'll give white chocolate chips a spin. The nests in the picture look quite yummy. I didn't know when to say "when" on the green food coloring so mine look more like real grass--only very watery. LOL

Fried Cornmeal Mush

This did not work for me. I made it yesterday morning, refrigerated it for the rest of the day and overnight and tried to slice it up to fry after church and it was too soft to slice. I went to look at other fried mush recipes on other sites and saw that most of them tell you to cover and simmer for an additional twenty minutes or so. All I know is, this recipe, the way it was posted is not firm enough to slice. The recipe on the package of cornmeal actually worked much better than this one. It called for three cups of boiling water, one cup of cold water. Also it said to cover and simmer for fifteen minutes after the cornmeal started to boil and thicken. Without the extra cooking time, the cornmeal will never set up. I know this, because I ruined three batches before I tried the recipe on the package.
