WOW! This recipe is so awesome because you can alter it to your taste without screwing it up. I added lots of cayenne pepper, 2 sweet potatoes, parsley and a minced jalapeno. I also substituted diced tomatoes, doubled (maybe tripled) the garlic and used one can of veggie broth with less water. I was looking for a recipe that encompassed a lot of veggies so the ones in my fridge wouldn't go bad. I happened to have everything on hand and added whatever sounded good. The result: an economical, highly aromatic, hearty, healthy and absolutely DELICIOUS "stoup" that will feed a lot or serve as leftovers for days. I bet it would freeze well too. Thank you for posting such an inspiring recipe!
