Wild Rice And Chicken Soup

Reviewed: Feb. 19, 2014
I made this recipe exactly as given with one change - I used 1% milk instead of heavy cream. Everything else I did exactly as the recipe says, and it came out delicious! My whole family loved it and gobbled it up. Some said it needed more salt and pepper, and we are thinking about adding crumbled bacon as a garnish next time I make it. I think more rice would also be good. The consistency was absolutely perfect - it was a thin cream soup. Thank you for a wonderful recipe!

Blackberry Cobbler II

Reviewed: Aug. 21, 2011
Amazingly delicious!! I made it almost exactly as given, with the addition of 1 tsp vanilla to the dough and 1/2 tsp cinnamon to the berries (as suggested by many other reviewers). Also, like others, I didn't have a cast iron skillet, so I just cooked it in a skillet and transferred it to a baking dish to bake. Worked perfectly! I will absolutely be making this again and will look forward to serving it to friends and family who are sure to love it! Thanks for a great recipe!

Chocolate Bar Fondue

Reviewed: Oct. 9, 2009
Fabulous! I cut the recipe in half, and left out the coffee. It made more than enough for the six of us, and was perfectly delicious!! Served with halved large marshmallows, macaroon cookie pieces, strawberries, and bananas. Thanks for a terrific recipe!

Cheese Fondue

Reviewed: Oct. 9, 2009
Delicious! Every bit as good as our favorite fondue restaurant. The only change I made was tossing in a clove of garlic with the simmering wine and adding a little lemon juice with the cheese as others suggested. Everyone loved it and it made plenty for our family of six. Thank you!!

Soft Oatmeal Cookies

Reviewed: May 8, 2009
I made these exactly as described, and they were fantastic! They baked into the perfect cookies - not flat, perfectly chewy, not cakey. Next time I am going to try 1 C whole oats and 2 C quick cooking oats, to see if I like them even better with more texture. Thanks for sharing a great recipe!

Whipped Cream Cream Cheese Frosting

Reviewed: Apr. 26, 2009
I made this exactly as written and it came out great! Love the very light and creamy texture and it got rave reviews at our family gathering. I would say that when whipping the cream, err on the side of overdoing it. You are on the right track if it is nearly butter by the time you are done, and remember, the buttercream frosting everyone seems to love is made with... butter! So whip away and don't worry about overdoing it. Same with the cream cheese mixture - the longer you do it, the smoother it will be. Thanks for a great recipe!

To Die For Blueberry Muffins

Reviewed: Mar. 20, 2009
Absolutely delicious! Made exactly as stated except: split batter between 12 muffins instead of 8 (still full to top before baking) and halved the crumb topping (still had plenty!) Also, I used frozen blueberries and they worked great! Served these at a brunch and they were perfect! Thank you so much - I will be making these again and again!

Super Duper Bean Salad

Reviewed: Feb. 26, 2009
This recipe was okay. It isn't quite what I was after. The dressing was far too sweet for me. The dressing flavor reminds me of the juice in a bread-and-butter pickle jar.

Cream Filled Cupcakes

Reviewed: Dec. 28, 2008
I am rating the filling only, and it was delicious! I made it exactly as specified. Very simple and easy to make with ingredients I already had on hand. I was originally looking for something more like a pastry cream, but didn't have whole milk on hand, or a lot of time. This was a perfect find! I made devil's food cake cupcakes from Betty Crocker and piped this filling right in through the top using a pastry bag and small tip. Frosted over the top with chocolate frosting and it was terrific! Will definitely be keeping the filling recipe! Thanks!

Speedy Cinnamon Rolls

Reviewed: Dec. 13, 2008
These are so easy and so delicious! I have tried making cinnamon rolls so many times, but they never come out gooey enough. The end up tasting like a regular roll with some cinnamon and frosting. But these are wonderful! They are moist and flavorful. I think the cream is the secret! I made them EXACTLY as described, except without the walnuts. Perfect!! Thank you for a great recipe!

Royal Icing II

Reviewed: Nov. 21, 2008
We just whipped up a batch of this recipe because the icing that came with our gingerbread house kit was not setting up firmly enough. Thank goodness I had meringue powder on hand. This recipe was perfect! Not only is it far superior to what came with the kit, but it is whiter as well, making the overall visual effect much nicer. Incidentally, I didn't need very much so I halved the recipe and it came out perfectly.

Blackberry Apple Pie

Absolutely wonderful! I followed the recipe exactly - except I didn't have fresh blackberries so I rinsed and slightly thawed a frozen berry assortment to use instead. This was delicious and easy! Thank you for a wonderful recipe!

White Chocolate Snack Mix

Reviewed: Dec. 22, 2007
This is delicious! I made the recipe exactly as given, with the single change of using the double-boiler method for melting the white chocolate and reducing the oil to 1 tablespoon. A perfect recipe for giving at Christmastime! Thanks!

Caramel Snack Mix

Reviewed: Dec. 22, 2007
Wonderful recipe - perfect for giving at Christmastime. We made the recipe exactly as stated (with the single addition of 2 teas. vanilla) and it came out PERFECTLY. We used a giant disposable roasting pan and it held the entire giant batch with room for plenty of stirring. The pieces came out beautifully, each piece coated thinly with glossy, crispy caramel. I think the key is stirring in the oven every 15 minutes without fail, and plenty of stirring as the mix cools. We made this yesterday afternoon and today it is still crispy and delicious - even here in rainy Seattle. This one is going in my favorite recipes collection - Thanks!

Hot Fudge Sauce

Reviewed: Sep. 24, 2007
Reasons to love this recipe: It's easy, it's made with ingredients you probably already have on hand, it's quick, and it is delicious! Thanks for a winner! My family lapped it up on vanilla ice cream and we will definitely be making it again. I did substitute semi-sweet chocolate chips for the chocolate and it worked perfectly!

Scalloped Potatoes and Onions

Reviewed: Dec. 26, 2006
Thanks for a good recipe! I wanted to try it particularly because it doesn't call for processed cheese, canned soup, or cream -- and I am so glad I did! It was delicious, and I can see how it could be altered with this or that for variety -- it's a perfect "basic" recipe. I added Shauna's suggested additions to the sauce before pouring it over the potatoes. Thanks Dorothy - and Shauna!

Pumpkin Bread

Reviewed: Nov. 22, 2006
This is a terrific recipe! I didn't have allspice so I left it out, but other than that I followed the recipe exactly. The batter made two large loaves plus one mini-loaf. We ate one loaf and froze the others, and Sue Case is right - this bread is even better after being frozen! It was delicious - moist and just the right texture. I will definitely make this again and again! Thanks Sue! *note: With breads I always keep a close eye on my oven and test the bread for doneness when it looks done. I don't think I kept this in for 90 minutes, but I view that as more of a guideline anyway, since ovens do vary so much. Take it out when it's starting to crack on top and a toothpick comes out clean or with moist crumbs.

Blackberry Pie I

Reviewed: Aug. 29, 2006
I made this as directed except that I added extra berries in the top unsweetened layer. That should have made the filling thinner, but it was still too firm for me. I don't want the berries all running out the side, but I also don't want them standing up like a solid, which is what they did. I would make this again, but with half the flour.

Oatmeal Cake II

Reviewed: May 6, 2006
I made this cake following the recipe exactly with one exception: I baked it in a 9x13" glass pan. We did not top it with cream - just the powdered sugar. It was wonderfully moist and delicious! My husband and children all enjoyed it. Thank you for a great recipe! I might try this with a crumble topping next time. I might also try it as muffins, but I think it would be too moist for paper muffin cups - I'd try it straight in the muffin tin. However I make it again, I will be sure to watch it carefully. It was moist this time, but it seems like the kind of recipe that could get dry quickly if you bake it too long. This is definitely a recipe to keep!
