Easy White Chili

Great recipe. My dh can't eat tomatos due to acid reflux but loves chili. This worked great for us. I added extra cumin and used much less cayenne than called for. I also served with lime wedges and that added a great flavor brightener to the dish. Overall, a great recipe!

Zucchini Bread III

This was a really good zucchini bread. The only thing I thought should happen would be to cut the cinnamon in half. I think the full amount is too strong and leaves a slight aftertaste.

German Baby

This was great! While it was cooking I warmed up some strawberries, bananas, & pineapple in a non-stick skillet with a 1 tbl. butter & 1/4 cup brown sugar. Topped the servings of the "pancake" with that and then added some light whipped cream sprinkled with cinnamon. The only suggestion I would have would be to use unsalted butter. The salted butter gave it more of a savory taste.

Saucy Pineapple Pork Chops

I really enjoyed this recipe. Make sure that you use sweet chili sauce and not the hot stuff because it will be WAY too hot if you do. I also used the sauce on chicken and I think I enjoyed it more on the chicken.

Thai-Style Tilapia

This recipe was pretty good! I think it would have been better if I had had the lemon grass on hand but as it is I substituted cilantro and added a bit of lime juice to the coconut milk sauce. I will probably make again as it is really an easy and tasty dish even without the lemon grass.

Banana Muffins with a Crunch

These were awesome! I varied from the original recipe only slightly. I used 1/3 whole wheat flour and 2/3 unbleached all purpose. I also cut the sugar by 1/4. Finally, I used chopped pecans instead of walnuts. Delicious!

Banana Tortilla Snacks

I make these for my two pre-school children. The only thing I do different is that I sprinkle the banana (which I slice) and honey with cinnamon! Make sure to roll like a burrito to make it less messy.

Yogurt Chicken

We really enjoyed this recipe. I made a couple of modifications: added cumin and a dash of tumeric to the yogurt and lemon juice. It added a nice spice to it and an added bonus was the chicken underneath the crumb crust was yellow, hinting at the lemon flavor. I followed other's advice and let it marinate for an hour. I didn't have bread crumbs so used Ritz crackers. It needed a couple minutes underneath the broiler to crisp up the crust.

Italian Roast Beef I

Great Recipe! I used a chuck roast because that was I had on hand. Because chuck is a fattier piece of meat, I omitted the oil. Placed it in a slow cooker instead of on the stove and let it cook on low for 6 hours. Turned out great!

Orange Chicken Stir Fry

I thought this recipe was great! I did use some left over pork from a cranberry-orange flavored roast that I had instead of the chicken. I might add just a touch less garlic next time.

Yellow Squash Patties
