Mandarin Almond Salad

This salad was excellent, I did add fresh strawberries and used a Raspberry Vinaigrette dressing, I did not have sliced almonds so I used Pecans with the sugar coating. I had friends over for dinner and they loved it, I will definately be making again.

Chef John's Perfect Prime Rib

This Prime Rib was amazing. I also use this same recipe for Eye of Round Roast, slice it thin after it is cooked and serve it with Au Jus and it tastes like prime rib. Very easy, fool proof and soooo good.

Raspberry Angel Cake

Really tasty and easy. I have made this same recipe 3 times using different jello's and fruits. Strawberry jello with frozen strawberries and tropical jello with canned pineapples as well as the raspberry and they are all great.

Sweet and Crunchy Salad

This was great. I toasted sliced almonds (did not use cashews) and noodles in oven and used apple cider vinegar instead of white wine vinegar (my preferrence). Did not use mandarin oranges but will try that next time. I only used 1/2 packet of chicken seasoning packet to cut down on sodium. This is a great quick easy side dish.

Rossi's Sausage Gnocchi

YUM! Made this for dinner tonight and thankful to have leftovers. I changed it up a bit and added chopped red peppers with the onions, used 2 15 oz cans of tomato sauce and 1 small can tomato paste and brown sugar instead of the white. This is a keeper!

Taco Stew

This was awesome! I did throw some green peppers in with the hamburger and onion and sauteed. I added about a 1/4 cup of beef broth to give it more broth. In place of the packet of Taco seasoning I used:Bill Echols Taco Seasoning. It really makes this recipe and you can adjust seasonings to your own taste. 1 tablespoon chili powder 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon crushed red pepper flakes 1/4 teaspoon dried oregano 1/2 teaspoon paprika 1 1/2 teaspoons ground cumin 1 teaspoon sea salt 1 teaspoon black pepper. This is a keeper.

Hot Artichoke and Spinach Dip II

Made this for company last night, it was a big hit and I was asked for the recipe. I mixed mozzarella cheese in the mix and put on top. I added some bell pepper seasonings, fresh ground pepper and extra garlic. Served with tortilla chips and thin sliced french bread....Mmmm

Pepperoncini Beef

This is an easy and tasty meal. I have used this for beef and pork. I add onions and a dash of bbq sauce and serve on a toasted crusty bun with provolone cheese melted on the bun in the broiler. I had tzatziki already made and it was a nice topping for the sandwich. I put it all in a crock pot and cook until it shreds.

Hot Fudge Ice Cream Bar Dessert

This was excellent. I have made it twice already for company and everyone loved it. I did add the cool whip after the topping and on top of the cool whip I drizzled caramel topping. It tasted almost like a snickers bar. This is a keeper!

Chocolate Mousse Torte

This was really good and very easy. I dipped some of the chocolate mixture on the bottom of each wafer to hold it in place because they kept sliding. This is a keeper and was a big hit on Christmas Eve!!

Fresh Broccoli Salad

High Temperature Eye-of-Round Roast

I like eye of round roast but had to cook it so long to get it tender. This turned out so good and there was no leftovers so next time I will make a bigger roast. My neighbor used this recipe for a venison roast and it also turned out great. I will definately be making this again. A++++++++

Chocolate Eclair Dessert

I made this for friends I had over and everyone loved it! Very easy to make and very quick also. There were no leftovers. I only had graham cracker crumbs so I added some sugar and melted butter and baked the crust for 5-8 min. then let it cool before adding pudding and added a sprinkled layer of crumbs and sugar on top then added the frosting and it was still wonderful. This is a keeper!!!!

Crispy Coconut Chicken Fingers

This was very good, I used Panko Japanese bread crumbs instead of flour and for the sauce I used black raspberry instead of Apricot with the Dijon and it was excellent. I also baked it in the oven after covering the cookie sheet with foil and adding oil for about 35-45 min, turned out crispy. So good it was asked for again the next day.
