Sour Cream Poppy Seed Cake

Reviewed: Nov. 2, 2012
This has been a family favorite that my mom used to make! If you want a little bit of a change, it's also super yummy to "flour" your cake pan with cinnamon/sugar mix. No glaze needed if you do it this way! Just an option :)

Fried Rice Restaurant Style

This truly is a fab recipe for fried rice! Be sure to definitely add the sesame oil, though! That makes all the difference. it doesn't take much, though. I love how easy it is to make this!

Parmesan Herb Bread

Reviewed: Jul. 7, 2009
YUM! This is awesome recipe. I add additional parmesan cheese on top before baking. It's a big hit with the bread co-op I participate in! It's so easy. And yes, make sure you just trust the recipe, even though it looks like it's not right, just try it!

Grandmother's Buttermilk Cornbread

Reviewed: Jul. 7, 2009
I make double batches of this in a 9x13 pan for my bread co-op I am in and it's ALWAYS a big hit! It's the best cornbread ever! I also have had to replace the buttermilk with milk/lemon juice mix when I've forgotten to pick up buttermilk. I can't tell a difference! It is SOOOOOO good & moist! Just the way I like my cornbread!

Sour Cream Chicken Enchiladas

OH my gosh this is SOOOOOO good. You will not be disappointed with this! I didn't have jalapenos, though, so I used diced green chiles and it was fabulous! Even my VERY VERY VERY picky husband & 7yo thought it was delish!

Quick and Easy Cheese Bread

Reviewed: Jun. 22, 2009
This is pretty good, but has WAY too much sugar. I would go with other reviewers and scale it down to 1 T. at the MOST. Otherwise it kinda has a sweet taste to it, which seems a little odd for a cheese bread. Also, I added extra cheese as per other reviews, and I quadrupled the recipe to make for the bread co-op I am in. To the quadrupled batch, I added 1 1/2 T. garlic powder (I think I might try 2 T. next time, it needed a little bit more) and 4 t. Italian seasoning. I might try upping that amount too next time just a tad. I also liked someone else's suggestion of cubing the cheese to put in. But definitely agree to add MORE cheese than calls for. I rated it 4 stars, because with the above adjustments, I think it would be a 4-star recipe, maybe even a 5-star :)

Garlic Mashed Potatoes

Reviewed: Apr. 4, 2009
I read through the reviews and only changed three things: added 2 t. minced garlic to boiling potatoes, whipped w/ beaters & then added 3 t. minced garlic that I sauteed in butter, then added garlic salt to taste. YUM.

Brooke's Best Bombshell Brownies

Reviewed: Mar. 30, 2009
I can only give 3 stars to this recipe. It is WAY too sweet--it was like eating chocolate tinted sugar crystals! I even cut down on the sugar to 2 1/4 c. and it was still too sweet. last time I made it, I used 1/2 white sugar & 1/2 brown sugar, but it gave them a really weird taste. I was hoping to find a good fudgey brownie similar to what you get out of a box, but these were cake-like. I read a lot of people suggested to use a 11x7 pan to make them--but they came out way too thick when cooked. I had to up the cooking time, too. I kept checking it w/ a cake tester and kept ending up with raw batter. 15 extra minutes later, there was STILL rawish batter, but I didn't want to keep them in any longer because the outside would've been overcooked. This just wasn't my fave brownie recipe. I will keep looking. Thanks anyways!

J.P.'s Big Daddy Biscuits

Reviewed: Mar. 17, 2009
These are FABULOUS biscuits! I doubled the batch & ended up adding another 1/2 c. flour to get the right consistency. YUM. Got rave reviews from my bread co-op that I am a part of for one of the nights I made bread for our group's families.

My Mom's Parmesan Chicken

Reviewed: Feb. 21, 2009
DELICIOUS!! This is SOOOOO yummy! My whole family absolutely LOVED this--the only thing I changed was I didn't have any breadcrumbs, so I just used smashed up Saltine crackers--oh, and I didn't use the wine. The only thing I would suggest is if you use the Saltines, omit the salt the recipe calls for :) YUMMMMM!!!

Cheddar Pull-Apart Bread

Reviewed: Dec. 31, 2008
I rated this as a 3 based on how it is as is. It DOES have a lot of potential, I just didn't think it had a lot of flavor (the bread itself, minus the cheese & onion). Would definitely DOUBLE the cheese, and make sure to use SHARP cheddar. Also, I would add grated cheese to the bread dough itself. I also added 2 T. Garlic Lover's Garlic (from spiceman.com) in with it to give it more flavor. I was afraid it would be too much, but I wish I would've added MORE, as it still wasn't enough flavor. Love the concept though, and it is a good hearty bread.

Fudge Brownies I

Reviewed: Nov. 9, 2008
DELICIOUS fudgey brownies if you use the 2 eggs rule. I also reduced the sugar to 1 1/4 c., and increased chocolate to 6 oz, as suggested by others. I used 7x11 glass pan and they turned out great, but I do NOT recommend cooking them for any longer than 28-29 minutes. Let them sit after removing from the oven, and they will still cook a bit longer. Otherwise they do end up kind of cakey even w/ the 2 eggs. They are also drier. I made them twice, once I cooked for 27 minutes (they needed another minute or two), and once again tonight, but only for 33 minutes and they were a bit too dry.

Crispy Cucumbers and Tomatoes in Dill Dressing

Reviewed: Sep. 6, 2008
This is SO FABULOUS. I have a ton of cucumbers right now, and this "salad" is an amazing way to use them! I have bought this salad at the store ($3.99/lb!!), but this recipe is WAY better!! Luckily, my husband doesn't like onions, so he doesn't even want to try it--but my 5 yr old daughter and I LOVE LOVE LOVE it!! It's VERY yummy with mozzarella chunks in it. I just took some of the string cheese sticks and sliced them in chunks to add to it. Also, I prefer to eat this when it's closer to room temperature rather than when it's cold. I think the amazing flavors come through much better! I also just tried adding some red bell peppers to it and it was really good too! THANK YOU THANK YOU THANK YOU for posting this recipe!!

Oatmeal Delights

Reviewed: May 20, 2008
Delicious!!! The first time I made these, I too added more flour--except I ended up adding 1/2 c. I made these again last night, forgetting I didn't have enough oats. I had a little over a cup. So I just dumped in another 1/2 to 3/4 c. of wheat flour until the consistency looked right. And they still tasted delicious! I like how versatile this recipe is, I used butterscotch chips and added the little bit of leftover chopped pecans I had into them to make them a little "chunkier" cookies. YUM.

Black Bean and Salsa Soup

Reviewed: Nov. 7, 2007
DELICIOUS! I used 1 can italian style stewed tomatoes and about 1/2 c. water instead of the broth. Pulsed it in the blender to the consistency I liked. I reserved 1/2 can of the black beans to add while heating, next time I might add more than that. I also used 1 1/2 t. of cumin as others suggested. SOOOOOO easy and YUMMY. Perfect for cold days/nights. Even my VERY VERY picky husband ate it!! And THAT says a lot!
