Roasted Vegetable Medley
I have made this with several different veggies and we all love; even my husband the meat eater!! A couple of thing I add are just a sprinkle of bread crumbs and even less of dried cheese and then just a very, very little drizzle of honey (does add to the calories but if you are trying to get veggies in, it works!). We have this quite often and it works for us. 5

Frank's Spicy Alabama Onion Beer Chili
This is my go-to chili recipe. The only modification I make is instead of 2 cans for tomato sauce, I use 1 can sauce and 1 small jar spaghetti sauce for the extra seasoning. So delicious.

Tiramisu Layer Cake
Hm.. I've made this twice, so far. The first time, it tasted excellent! The "frosting" took f o r e v e r to set up, but that's probably just my own impatience. I also used 4oz cream cheese and 4oz sour cream in exchange for the mascarpone. The second time, we had just moved and I could not find coffee flavored liqueur anywhere (I know, it's weird) so I substituted it for Starbucks frappuccino and I highly recommend doing this. It turned out as probably the best tasting tiramisu I've had! My mom's a cake decorator and we even considered having her use this recipe for our wedding cake!
