Easy Key Lime Pie I

Delicous and easy, although my crust was a bit over-done and brittle, I timed to exactly 15 minutes. Next time I will bake at 350 degrees. I used "Nellie and Joes Key West Key Lime Juice". Delicious. I find this at my Krogers in the beer/wine department near the mixers, not in the juice isle where you would think it would be. The recipe for Key Lime Pie on the label is almost identical, except uses only 3 egg yolks and bakes at 350, Food for thought.

Chicken Tortilla Soup II

I ran a trial of this for my Cinco de Mayo party and it was wonderful! The broth is delicious, not a kids dish, it's got some kick to it! I sauted my chicken tenders in Pensky's chicken taco seasoning first, a goovy blend of Mexican spices. It occured to me as I was sauteing the corn tortillas, I bet a couple of handfuls of Fritos would be just as good. I also added some chipotle, and extra low sodium broth. The addition of corn and rinsed black beans would make this a fabulous chicken chili. Great dish, Trey!

Garlic Chicken Stir Fry

BBQ Chicken the Old Bay® Way

Wonderful summer grilling recipe! The bar-b-que sauce is excellent, would not change a thing, nice and thick and tangy. The addition of horseradish & Old Bay really makes this unique. I'm making this sauce for Fathers Day and putting on Bar-b-que shrimp skewers, it would also be delicious cold for shrimp cocktail.

Old Bay® Steamed Shrimp

This shrimp is the ultimate summer appetizer! I double the amount of Old Bay and add a half stick of butter to the mix, this adds flavor and allows the Old Bay to adhere to the shrimp. Find nice large shrimp deveined in the shell. Serve this with the sauce fron the "Chicken the Old Bay Way" recipe from this site, and Club crackers or saltines to soak up the extra broth and sauce. The only thing you need to add to this recipe is an ice cold beer or sangria!

Savory Garlic Marinated Steaks

Wonderful recipe! I actually used it on boneless pork tenderloins, and it was delicious! I used molasses instead of honey, the meat had a nice, carmelized quality. I also added a touch of ground ginger, and skipped the salt (I alway do with any recipe calling for soy sauce). This recipe makes alot of marinade, I marinated 4 boneless tenderloins and had about 2/3 cup left over. This would easily marinate 4-6 steaks, especially if you use the zip-lock bag method. I will be using this on my beef tenderloins for my Father's day mixed grill.

Reuben Spread

A great appetizer, always a hit with everyone. When I'm in a hurry I just put a dollup of dressing on party rye squares on a cookie sheet, top with meat, cheese, and kraut, and bake until hot an bubbly. Also good with turkey and Swiss cheese. YUMMAY!

Pita Chips

These are wonderful! I cut the pockets in half to make a lighter, thinner version, a little tricky as they tend to break, but crunchier. You can skip the oil for a lighter version. My favorite topping is kosher salt and curry powder, great with hummus or eggplant dip! Thanks, Dawn.

Bananas Foster II

I made this for Father's day and received rave reviews! I printed off the recipe and scaled for eight servings. In my rush to get this made and served I only added 1/4 cup brown sugar (should have been 1- 1/4 cups!, I missed the "1" in front, and it was still terrific and had plenty of sauce for eight glasses. So I can safely say you can cut down the sugar if you like! I used pecans instead of walnuts, and served in martini glasses with whipped cream and a cherry. Very impressive presentation and easy!

Old Bay® Spicy Marinated Chicken

I used this marinade for shrimp skewers and finished them with the sauce from "Chicken the Old Bay Way" recipe from this site, these were out of this world delicious. A definte keeper for a summer bar-b-que, so easy and yummy!

Honey Ginger Grilled Salmon

My Dad loved his father's day grill. We used this marinade with tuna and it was delicious! I forgot to pick up green onions, so I used chives and a sprinkle of onion powder. Yummay! A keeper. This marinade would be excellent on any fish, shrimp, scallops, or pork.

The Best Banana Bread

I am eating this as I type...hold on... last bite...YUMMY! I had three crummy bananas and was looking for something good to do with them! Pat's Baked Beans

This was a smash at my bar-b-que birthday party Sunday! I made the following changes: used 1 can butter beans instead of the garbonzos, decreased the molasses to two tablespoons and increased the brown sugar to 2/3 cup, used about two heaping tablespoons of BBQ sauce instead of the ketchup, and did not drain the beans. I just did a quick saute of the pepper bacon. I mixed everything in the crockpot and cooked 6 hours low, last two hours high (lid removed) to thicken this and meld the flavors. Mediterranean Summer Tomatoes

This is my favorite way to eat tomatoes! Light and fresh, the good tomatoe taste comes through. Use good Balsamic. I sometimes top with crumbled feta or blue cheese and black olives, use fresh basil confetti for added color and flavor. Perfection!

Awesome and Easy Creamy Corn Casserole

A classic! I make this every year for my annual Cinco de Mayo party, jazzed up with chopped jalapenos, cheddar cheese, onions and diced green/red peppers. I'm making it for an Independence Day party tomorrow and adding onion, cheddar and bacon. You will make this recipe over and over!

Shrimp Pad Thai

WOW! After many, many years of loving this for carry-out, we have finally found an easy and delicious alternative! Changes: double/triple the sauce recipe as the previous reviewers suggested, added 1 tsp red pepper flakes (we like it HOT), and 2 tsp garlic chili sauce. We added a handful of shredded carott, fresh basil, fresh bean sprouts, about 1/3 lb spicy sausage (this is the way my fave restaurant makes it) and used Trader Joes Rock Shrimp. I've also used chicken. Perfect. If you love spicey Pad Thai restaurant style, you will be very happy with this. Good enough to entertain with. Thanks Laura, and thanks previous reviewers!

Chicken Piccata I

I'm giving this recipe only four stars as written, after working with the recipe I made the following changes and believe it's a five star: don't batter the chicken, just flour (added salt, pepper, and paprika to flour), use real butter and olive oil to saute chicken, double or triple the sauce using good white wine, and add several tablespoons of capers to finish. I served with parmesean/parsley mashed potatos on a large platter with lemon slices, beautiful presentation. This dish is definitely for lemon lovers, and the flavors are mild and mellow, so you can finish the meal off with a big bang of a dessert!

Corn Casserole I

I love this recipe, it works so well with everthing, especially bar-b-que! I use "Glory" brand skillet corn, it is delicious. Sometimes I use an egg, sometimes I don't. I love jazzing it up with jalapenos and also have used bacon, onion, and cheddar. There doesn't seem to be anything you can do to "kill" this recipe!

Fried Green Tomatoes I

Ohhhhh...yum! This is my favorite summer splurge! Made these tonight and they are absolutely delicious. The cornmeal is the secret here. I add paprika and s & P to the meal for color and flavor. Slice the tomatoes 1/4 inch thick, this is a must. Sprinkle with Kosher salt as soon as they are out of the frying pan. I use bottled ramoulade sauce for dipping. So easy and so good!

B.L.T. Salad with Basil Mayo Dressing

This is a wonderful salad with something for everyone! I took it to a pot-luck last night and it was a huge hit. I used red and yellow tomato wedges, pepper bacon (oh yaaa), and added cubed avocado. I prepared the dressing in the blender, using a whole package of basil, it was cool, creamy, and delicious. Fabulous!
