Creamy Mushroom Meatloaf

Reviewed: Oct. 6, 2012
This stuff is just silly good, I could drink it as is! Made exactly as written with lots of black pepper added. Instead of meatloaf I just added a 2 lb bag of prepared frozen turkey meatballs and baked at 250* for a couple of hours until we were ready to eat. A great easy "semi-homemade" weeknight meal over buttered/parsley kluski noodles. Thanks for sharing, John, a winner and def do-over for sure.

Linguine Pescadoro

Reviewed: Oct. 1, 2012
Five stars on the base recipe, and five plus on the tweaks! I made as written but added some shallot, more red pepper flake, onion powder, and oregano. Skipped the whole clams and just used minced. I added a tablespoonof sugar to sweeten and cut the acidity, and a splash of heavy cream to blush. Lots of fresh basil too. Yummy, hubs had a record three servings!

Sherry Apple Pork Chops

Reviewed: Sep. 25, 2012
What a wonderful, simple and delicious weeknight recipe! So seasonal, I used granny smith apples for a nice tart taste. I made exactly as written, just browned my chops in an oven safe saute pan, and removed and added the apple slices and spices, butter, then just placed them on top with the sherry and into the oven they went. Moist and tasty, plenty of pan juices. Oh, and I did add some dried cranberries to the mix. Hubs raved over this. Thank you for sharing your recipe. Update 10/22/12...Tonight I rubbed the pork chops with McCormic Jerk seasoning then browned, wow, adds wonderful flavor that compliments the brown sugar/cinnamon so well.

Restaurant-Style French Onion Soup

Reviewed: Sep. 20, 2012
Recipe Group pick September 15, 2012: Loved this french onion soup recipe, hubby raved. It's a little heavy on prep and cooking time, a special occassion soup, but very worthy. I made as written with a little more sherry :). I did cheat on the topper, I made them separately under the broiler and just popped on top and served a couple on the side. Oh, and I did put a smear of pesto on the baguette slices then the cheese. Yummy, thanks for sharing your recipe with AR!

Chutney Chicken Salad

Reviewed: Sep. 18, 2012
I made this with left over peach and chili glazed grilled chicken, so I already had a fantastic start! This was absolutely delicious. I added a little diced granny smith apple for some additional tartness and texture, too. Love this recipe. Thanks for sharing!

Havana Slow Cooker Pork Tenderloin

Reviewed: Sep. 13, 2012
This was just wonderful! Smelled soooo good while cooking. I made exactly as written with a small exception, I had an individual bottle of OJ, just just threw the whole thing in, about 10 oz. I also cubed two sweet potatoes and added those to the crock, too. Pork was moist & flavorful, and the juices delicious over the pork. Loved this recipe! Thanks for sharing with us, arich01, it's a winner!

Made this for the recipe group pick 9/7/12....loved this rockin' sauce! I prepared a couple days in advance as written and chilled to let all of those flavors meld, just delicious. Golden Pork Chops

Reviewed: Sep. 3, 2012
Simple and delicious, great weeknight family comfort food. I used a large oven safe saute pan, and seasoned my chops with Lawrey's and cracked black pepper, and browned on one side of the pan. The other side I added the onions and mushrooms, seasoned, and sauteed as well. When the chops were browned I just mixed everything together with the sauce, and placed the covered pan in the oven 350* for 45 minutes. Served with mashed potatoes and oven roasted asparagus. Hubs loved this meal. Thanks of sharing!

Shrimp Artichoke Dip

Reviewed: Sep. 2, 2012
This was yummy, yummy stuff! I doubled the recipe, except for the artichokes & onion, and added Old Bay and a couple of splashes of lemon juice to the mix. I baked about 40 minutes and allowed to set up for ten minutes of so before serving. Sinfully good, my guests loved it.

Slow Cooker Chicken Creole

Reviewed: Sep. 1, 2012
This was a terrific, quick, weeknight recipe. I put this together in about 15 minutes and let it go on low about 10 hours before serving over rice. I used Zatarran's creole seasoning sprinkled over the chicken, and added 4 sliced links of andouille sausage over that. Topped with the veggies and tomatoes, and added a cup of caldo de tomate/pollo broth, and more Zatarran's over that. I took the chicken out about 6 hours into the cooking time and shredded. Next time I make this I think I'll add some tomato paste, I would have liked a little more thickness/tomatoey taste to the broth. Overall, a very tasty dish and a definite do-over. Thanks for sharing your recipe with us!

Spicy and Creamy Vegetable Soup

Reviewed: Aug. 30, 2012
This soup was a nice change of pace for us. Love all of those fresh veggies! The broth is excellent, and the trio of dill, thyme, and rosemary works wonderfully in this recipe. A few tweaks, I used about 1/2 lb hot italian sausage, browned and removed from the pot to be added back later. I just eyeballed the amount of veggies, and probably ended up doubling most. I sauteed the sliced mushroom with the onion/celery/carrot mix, sauteed in the sausage drippings, and used low sodium chicken broth, about 8 cups total. I also used a bit more heavy cream, and celery salt to season. A nice summer-into-fall soup! Thanks for sharing your recipe with AR.

Crab Cakes with Curried Yogurt Sauce

Reviewed: Aug. 29, 2012
I am reviewing the sauce portion of this recipe only, I chose to use another crab cake recipe. Absolutely loved this sauce on crab cakes, it's slightly sweet and fruity from the mango chutney, and the amount of curry is perfect. I prepared exactly as written. Make well ahead of serving time to chill this and let the flavors meld. I think this would also make a very interesting dressing for a salad. Thanks for sharing your recipe with AR, very good!

Chef John's Crab Cakes

Reviewed: Aug. 29, 2012
Really enjoyed these crab cakes, love that they are mostly crab, little cake. This said, even after two hours of refrigeration I found them a little difficult to form. After forming I chilled for a couple of more hours. Next time I will add a few more crackers, and make 5-6 smaller cakes, four cakes were huge, and perhaps that's why they wanted to break apart. I sauteed in a super hot mix of peanut oil and butter to get a good crust and keep them together. Thanks for sharing this recipe, Chef John, it's a keeper after a few tweaks for me.

Thai Red Chicken Curry

Reviewed: Aug. 16, 2012
Loved all of the fresh veggies in this curry, but found the flavor lacking, even after tripling the curry. Maybe adding a bit of fish sauce, some thai basil? Thank you for sharing your recipe with AR, I enjoyed trying it.

Amy's Barbecue Chicken Salad

Reviewed: Aug. 14, 2012
Loved this delicious entree salad, so did my guests. I used a rotisserie chicken, red, orange, and yellow tomatoes, and added diced green & red pepper, avocado, and shredded cheese. I offered the fried onions and colorful tortilla strips on the side. I made the dressing with lite ranch, no one was the wiser! Colorful, festive salad for casual summer entertaining, loved this, Amy.

Pasta Primavera with Italian Turkey Sausage

Reviewed: Aug. 6, 2012
Loved this easy weeknight recipe! I sauteed the turkey sausage until about half cooked, then just added all of the veg and garlic into the same large saute pan. I used a 14 oz can fire-roasted tomatoes instead of the romas, and added about 2/3 cup caldo de tomate con pollo broth to help soften the veg and soak up the pasta. I just added about 8 oz tri-color rotini, I like more meat/veg and a little less pasta ratio. All of that fresh basil makes this dish. Oh, that and fresh shaved parm on top. Thank you for a versitile recipe, a keeper for sure!

Grilled Caribbean Chicken

Reviewed: Aug. 5, 2012
A nice departure from soy based marinades. I marinated 8 hours, perhaps not long enough, I found this did not add a lot of flavor to the chicken, but what penetrated was tasty and the chicken was moist. I served with a dollop of mango chutney on the side. Thanks for sharing your recipe, Robyn.
