Vegetarian Gravy

This recipe was delicious! I used a half of an onion instead of a 1/3 cup, and added rosemary in place of the sage. I also omitted the salt and pepper because it tasted perfectly salty after combining everything else. I used Shari's organic vegetable broth, too. Can't wait to taste it again!

Vegan Chocolate Cake

This cake turns out very well--not too dry, not too dense, and with enough chocolate taste. I make it often for my coworkers and they keep requesting it again and again. They are always surprised to hear that it is vegan. I just tried making it as a cupcake, as well, and I love it even more. It has a great texture and plenty of flavor. I got 15 cupcakes out of the recipe and baked them for 20-30 minutes. I topped them with a veganized buttercream recipe.

Black Bean Salad

This is a really flavorful and quickly made meal when paired with some tortilla chips. The colors make it attractive and the textures and tastes of the various ingredients work so well. The first time I made it with bottled lime juice and the second time I used fresh. Fresh is definitely the way to go! I split the recipe in half and I am still enjoying the results 3 days later. Delicious!

Black Bean and Salsa Soup

This recipe was very pleasing. I followed other reviews and added 3 tsp of lime juice, fresh chopped cilantro, garlic, and cayenne pepper. I also used 3 cans of beans and kept half of a can out of the blender. My only disappointment was that it was not spicy enough, so next time I will pick a hotter salsa. Otherwise, this was so quick, very delicious, and great for a comfort food on a rainy evening.

The Best Vegetarian Chili in the World

I doubled this recipe for a 15-person dinner party and it was a hit. I cut back the cans of tomatoes by one third as I thought it was getting too watery. I did not use the canned green chiles because I couldn't get any on short notice. Instead I added some fresh serrano chiles. For the meat crumbles, I used the Quorn brand. The finished product was very flavorful, slightly spicy, nice for a range of tastes. I will definitely make this again.

Cholay (Curried Chickpeas)

I tasted it while it was still in the pan (during that last five minutes of cooking) and I was pretty disappointed in the flavor. So then I added another round of spices, including cayenne pepper, 1/4 tsp. garam masala, 1/8 tsp. curry powder, and 1/8 tsp. garlic salt. I let it cook for another ten minutes so that all the chickpeas were soft. I served it on top of brown rice and it is delicious. Instead of a tea bag I used some loose Indian-spiced rooibos. I would definitely make this again, I will just be sure to double the spices.

Oven-Roasted Sweet Potato Fries

Pretty tasty. I kept them in for 40 minutes but about 1/4 of them burnt. I still ate them, though. I also added a little cinnamon and a touch of cayenne pepper. I will make them again but keep a closer eye on their progess in the oven.
