Great Chicken Taquitos

This filling is GREAT! if it were just the filling I would give this 5 stars(more if I could). However, it could just be that corn tortillas hate me, but in any case the tortillas just broke. What I ended up doing was using the filling to make burritos, with flour tortillas, and then baked.

Refried Beans Without the Refry

First off, I live at a high altitude (a bit over 7,000 ft.) but the beans were still done after 8 hours, which is awesome. I didn't use jalapeno, which I think I will next time as these were bland. Also WAY too salty, probably 3 teaspoons (or less) is enough, especially if you are eating it with cheese, as that adds salt anyway. I doubled the cumin (in another recipe I have it calls for 2 tsp. with this many beans).

Amish White Bread

This is a great white bread. I only used 1/3 cup sugar and am glad I did! This was sweet enough with that much and it would have been way too overpoweringly sweet with the full amount. This is my first bread, and it turned out great.

School Lunch Bagel Sandwich

This is a great idea. I toasted a plain bagel, then spread with mayonnaise and topped with shredded carrot, arugula, and lettuce. Next time I'll also add slices of bell pepper. My family really likes bagels, so this will be a regular lunch.

Salsa Ninety Nine (Mild)

This is nowhere near hot enough fro me. I did seed the jalapeno, so that might be part of it. I'm going to add some red pepper flakes to get the heat up.This salsa doesn't look as red as I would like it, with all the cilantro it just turned sort of brownish.

Spicy Orange Chicken

This was REALLY SPICY!!! I didn't seed the jalapeno, which I will do next time, and perhaps only use half or 3/4. Also the cooking time was way off. On med-hi it took me about 3-4 min to caramelize the chicken. I've found that with many of Chef John's recipes I have to turn the temp down, so maybe it's just his stove it's as hot as mine.

Marinated Pork Tenderloin

This was really easy to make, but it wasn't very flavorful (it marinated for about 8 hours). We did heat up the leftover marinate, but it was really thick(we added more water), and overpowering.

Home Made Top Tarts!

I made my own crust (Ruth's Grandmother's Pie Crust). This uses a LOT of jam/jelly, so make sure you have a jar or two. I had the equivalent of one jar of apricot and grape jam/jelly(we liked the apricot better). I didn't make them all rectangular, some were more like strange triangles, and they were all very large. I didn't make the frosting, and it was sweet enough without it.

Chef John's Flour Tortillas

This recipe is good, but the cooking time/temp is off. I made dough, and rolled out with a rolling pin (it's really not that bad guys, although I with there was some recommended thickness) and when I put it in the pan (cast iron skillet) it almost immediately smelled of burning flour. I ended up turning the burner to LOW, and following the one min, flip, one min, flip, on min, take out timing. The tortillas put in the pan on med. hi. were burned and very brittle. It could just be that my burner is hotter than his, but I don't think that it would be THAT MUCH of a difference. I will make these again, but on LOW heat.

Pot Stickers Traditional

If this were just for flavour, then I would give this 5 stars, but when it came to cooking, I made some alterations. (btw, the smell when this was marinating was AMAZING!) I didn't cook the pork beforehand, so that had something to do with it, but when I followed the instructions the pork didn't get cooked. What I ended up doing was: heat 3 Tbs. of oil in a deep skillet, add pot stickers (I did it in three batches), add 3/4 cup water and cover. After about 8 minutes take off cover and lett water evaporate until the bottom begins to brown, take out of pan and keep warm. For the next batches I added one Tbs. before putting in pot stickers. I also made the wrappers (according to one of the comments) with 2 cups flour, and 3/4 cup water plus 2 Tbs. then you let it sit for 30 min. and roll out to about 1/8 in. then cut with a three in. round cookie/biscuit cutter. I found this dough to be WAY to sticky, so I probably added another cup or more, but we had the equivalent of one wrapper left, so it came out well. I also used 1/2 a bag of shredded green cabbage, 10 slices of water chestnuts, and 1/2 tsp. chopped ginger (from a gar, I don't have any fresh). The taste was amazing! I was afraid it was going to be too much cabbage, but I could barely taste it. The sauce, however was WAY WAY too spicy. In the future I think I'll stick with soy sauce, sesame oil, rice vinegar, and a bit of ginger. I will DEFINATLY be making these again.

Kafta (BBQ)

I halved the cayenne, I will probably use more than that next time, but still not the whole 1/4 teaspoon. I thought there was too much onion, even though we didn't use the whole thing. It seems like this needs a side dish that would lighten it, as this was very dense. Perhaps pita bread and tzatziki (sp?)?

Easy Slow Cooker French Dip

First of all, this was the easiest thing in the world to make. I didn't like this as much as the rest of my family, I thought this was too salty, and I generally didn't like the sauce. The rest of my family really liked it though. I used Anchor steam beer, so maybe that has something to do with it. However, I don't think I will make this again.

Chicken Tortilla Soup I

I found this soup to be very thick, I added about a cup more water than it calls for, and still didn't have as much broth as we would have liked. I would suggest to add somewhere around 2 cans, and then rinse out the cans and put the water from that in as well. I halved the recipe, but still used two chicken breasts, but that still came out to less than a pound of chicken. I was surprised how flavorful this was, while only having chili powder and oregano as seasonings. I also used slightly more green chilies that this calls for, I was supposed to use half the can and accidentally poured the whole thing in, I took out all I could of the "pure" peppers, but it was still slightly more. Thank you for a great recipe.
