Coconut Frosting and Filling

All you folks who ended up with a soup are 'stirring' and not 'folding' in the cool whip. folding the ingredients in allows the cool whip to retain its fluff while stirring breaks it down and it becomes watery...

Honey Garlic BBQ Sauce II

i thought this was great also, much better than store bought. i used 1/2 the amount of garlic, none of the peppers or hot sauce and only 3/4 t. cajun as my family does not like spicy food. tasted it and was needing just a trickle of liquid smoke...delicious! also will be my go to BBQ sauce now.

Fresh Strawberry Upside Down Cake

very tasty, the 'real' strawberry flavor came through. i checked it at 38 minutes and it was done, perhaps could even have gone 35 minutes for a nice moist cake. next time, i might let the berries sit a few minutes before adding the remaining ingredients to let them draw even more juice.

Herb-Crusted Chuck Roast

i too was skeptical but the roast turned out perfectly. after making it several times and then having a couple of timing mishaps i find that it always comes out perfect if you watch the cook time carefully and use your meat thermometer. anything more than rare and i find the roast is not what i want, more like the dry, tough results we were all expecting. if you like your beef rare make this incredible, tasty roast!

Mushrooms with a Soy Sauce Glaze

the trick with mushrooms is to get your pan very hot, add the butter and let it melt and sizzle just til melted then add your mushrooms. toss to coat with butter, then LEAVE ALONE to brown. when one side is browned toss or flip to brown the other side continue with recipe above. with a very hot pan you will not have the mushroom giving off much liquid. i also added a splash of sherry to mine. i thought these were excellent however i think any sauteed mushroom will be good if you use a very hot pan.

Cocktail Meatballs III

these were very good. the sauce is a BBQ style taste, tangy and sweet. the meatballs really have great flavor too. i made these as stated, next time i might add a couple of dashes of tabasco for a little heat to balance the sweet/tang.

Cookies 'n' Cream Fudge

this fudge tastes just like the cookies and cream candy bar, one of my favorites since i do not like milk chocolate. i recommend pressing the top layer of cookies lightly after pouring the chocolate mixture since the cookies pieces tend to fall off. the only down side is, if you are not using premium white chocolate you do get that slight artificial taste...

Baked Pasta

i thought this was rather bland. used up homemade delicious homemade gravy and felt it was wasted. if anything, would use more of the spices. was also a little dry.

Bake Sale Lemon Bars

in order to make these more lemoney but not more tart (as adding juice will do) a tablespoon of lemon rind should be added. note: when grating rind off of the lemon do NOT include the white only grate the yellow and you will have a deep lemon flavor without addeding tartness..
