Easy Bake Brisket

If I could give this recipe ten stars I would, YUM!!! I made this for Easter in a pinch, because the store was OUT of ham. I thought it was a disaster because I have never made brisket before. It was a huge success and my husband who is a major ham fan stated that he didn't miss it at all!!! Anyway, followed the recipe exactly only doubled the ingredients because my brisket was over 9 pounds. Also, I slow cooked this at 225 all night long(covered of course). Was just so easy and so delicious!!! THANK YOU! --- P.S - The leftovers(if you have any) make great BBQ sandwiches as well as taco filler, with the right seasoning additions, oh my goodness this is so versatile!!!**Edit** to say that the second time I made this I used the crockpot. I MUCH preferred the slow and low oven cooked version that I utilized the first time. I suggest the oven preparation for sure.

Toad in the Hole III

THIS WAS SO SIMPLE AND DELICIOUS! I made my version of the recipe due to what was on hand. So I'm not sure it was quite authentic, but still yummy nonetheless. Anyway, I used Hillshire Farm Smoked Sausage(cut into slices). I also added some cooked onion to the sausage and oil. To the pudding mixture I added some garlic powder along with the salt/pepper. Was crusty and delicious when done ~ I served this with a simple mustard(my family not keen on the onion gravy). Was very simple and a casual meal keeper. Thanks so much!!!!

THE Pasta Salad

I love this salad. I often change it up, depending on what's on hand, but it's always a hit. The sauce is wonderful, and I always make extra, as I tend to add more veggies(ie.; celery, carrot, bell pepper, tomato, cucumber). I also sub the swiss for cheddar, because no one here will eat swiss. Basically, this is an awesome base recipe to suit any liking. Thanks.

Betty's Burgers

OMYGOSH DELISH! I made these burgers tonight and we loved them. I did have to make a few subs, based on what I had on hand, but same concept with minor changes. I subbed the cheeses... I used cheddar and mozarella. I'm thinking it would be really good with pepperjack as well. I used a Poblano, for my green pepper, and it worked out wonderfully. The only suggestion I have is... make sure you get a really good seal around the burgers. A few of mine weren't sealed so well, and started oozing the cheese. I broiled them about 15 minutes per side, we added more cheese on top, and served. Thanks so much! These tasted great!

Breakfast Casserole I

This got so many good reviews that I thought it would be a sure thing, but I'm sorry we just did not enjoy this at all. Made this because I was cooking for a crowd and it did make a lot. The bread made the texture of the dish spongy, the bacon got soggy, the cheese burned, it tasted pretty bland, and hubby said the "the broccoli doesn't go." Just overall was not received well by anyone. I would have been better off making scramble or breakfast burritos. Who knows maybe it was the cook that was at fault? I will say that I followed the recipe to the tee though.

Cucumber Shell Salad

Man this is good stuff and very simple! Made a few additions to this by adding some cubed smoky ham and cubed cheddar. The ham and cheddar added a smoky saltiness that was a perfect accompaniment to the flavors of this salad. Wow this made a stupendous salad that could be served as a meal. Thanks we really enjoyed it.**Edit** to say that the pasta will absorb the ranch dressing, so if making ahead of time you should either wait to add the dressing right before serving or have extra on hand to remoisten the salad as needed.

Summer Chicken Burgers

This recipe was 5 stars with just a few minor changes!! Add some bacon - it is so delicious on this sandwich! Also, the avocado can be mashed up with the mayo to make a delicious spread(easier to eat that way). We use a little less mayo and add some garlic powder to the spread mixture. YUM!

Beef Enchiladas

These were pretty good; although they are not enchiladas. These are more of an enchirito(hence the flour tortillas). All in all, the flavors came together nicely and they weren't too much trouble to make.

Mexican Pork Chops

We had this tonight and it was really good. I marinated 6 chops overnight with a rubdown of oil and half a packet of our favortie taco seasoning before browning. I also used a box of Rice a Roni Spanish Rice, because that was all I had on hand and it worked out fine. I added the remaining half of the taco seasoning and Rice a Roni packet to the tomato/rice mixture while simmering. I served with a tossed salad and cheese quesadillas(thanks to the poster who suggested that - was the perfect addition to this meal). I got many compliments from the family and this was super easy. Thank the Lord because anyone who's ever had a six month old to take care of knows about needing easy dinner solutions!!! Thanks for the post I will make this many more times - we really enjoyed it.

Cocoa Fried Chicken

As the recipe is written, the cocoa powder really doesn't add much. I have made chili in the past with cocoa powder so I added some chili powder and garlic powder as well. It was fantastic with those additions. Cocoa really enhances chili flavors. Try it this way you'll like it!!

Taco Soup V

I have to say this was delicious. I added a few extras - instead of kidney beans I used can of corn and a can of sliced new potatoes. I also used more hamburger meat and ranch style beans with jalapenos instead of plain pinto beans. We garnished with crushed corn chips and shredded cheddar. This was a big hit around here -- got eaten all up by my hubbie and his friends over watching football. This was also so easy and I need easy with my four month old demanding constant attention. Thanks so much this is a keeper!!!!

Nana's Squash Casserole

MMMMMMMM so good. I subbed a box of the "store brand" cornbread stuffing for the cornbread, as that was all I had on hand, so I left out the salt. I also halfed the amount of butter, and added extra cheese. Very small adjustments that were made, and I must say this was so good. I served it with ham, and it went perfectly, but I liked the casserole better than my ham(LOL). Thanks so much for a great recipe! It's a keeper!

Southwestern Green Chile with Pork Stew

YUM, YUM, YUM! Read the reviews on this one and they were mixed, so I was a little hesitant. Well, I thought this was great. It's a great base to tweak the seasonings to your family's liking but we liked it as written. For those who said it was too spicy ~ I don't think the recipe intends you to use jalapenos as your main chile. We used anaheim chiles and roasted them ourselves. You can pick up canned green chiles in the supermarket to skip that step of you wish. The addition of some jalapeno for heat is fine, but leave it at that :)..... This also tastes great with red chiles instead of green - I have made it with New Mexico Red Chiles and it is YUM, YUM, YUM. Very authentic and tasty. Thanks!

Melissa's Green Chile Stew

My Grandma and Grandpa were the masters of this dish. It's definitely a comfort food. The proportions in the recipe are good, but I go through the whole process of roasting and peeling green chile when I make it. I cook the onion along with the beef and drain. We like ours with more liquid, so I always add beef broth. In addition, the posted recipe didn't use garlic, but it is a must have. Green chiles without garlic is like pizza without cheeze. It's a great base to tweak to your own liking. Also, it's really inexpensive.

Make-Ahead Mashed Potatoes

I can't believe I have never rated this. I have been using it for years now. These are the most delicious and rich potatos, omygosh, I can't say enough! I have occasionally topped with crispy bacon bits... even more decadent. I am making them again for Thanksgiving. These are my absolute favorite!

Oven Fries II

I thought this was super easy and quite good!! You can use the base and add whatever seasonings you like. I peeled the potatoes before microwaving them, and then followed the recipe exactly. My potatoes did not end up soggy at all, in fact, mine were really crunchy on the outside. I was quite amazed at that! Good stuff. Thanks for the recipe.

Carne Adovada

Very GOOD! I often purchase the preseasoned, ready to cook, Adovada at my local Hispanic market. When I have the time to do it myself, I use this recipe. We love Adovada and this an authentic recipe. After reading some of the other reviews, I would suggest that people use the right kind of chiles. If not, the taste will not be the same... you can not sub regular chili powder for the New Mexico Reds. Thanks for the delicious post. We enjoy this recipe immensely.

Pear Bread I

This recipe was pretty good use of an abundance of pears; although, it was a bit sweeter than I was expecting. I did make a few changes though, as follows: 1 cup brown sugar, 1 cup white sugar, and 4 cups chopped pears rather than the 2 shredded. I made 24 muffins with this recipe rather than 2 loaves. Muffins are easier for my toddler to hold on to, and I found the consistency was more cake like and suited to muffins. I would make this again, as we really enjoyed them but I may decrease the sugar a bit the next time. Thanks for the post. It was a good basis to put my own spin on it.

Carolina BBQ Pork Sauce

Oh my goodness, I think the only way a person could enjoy this sauce is if you enjoy drinking vinegar from the jug. Holy cats!!! I tried it and it's not for our taste. I think it would also be a nice way to ruin a good piece of pork. Thanks anyway.

Sopapillas

These were really good although I'm still searching for a recipe as good as my Grandpa used to make. Perhaps it was just Grandpa's touch! Anyhow, these did turn out well for me. I read the reviews and some had commented that they weren't sweet enough - well they aren't supposed to be. Sopapillas can be eaten with a savory dish as well as sweetened up with honey, etc. Anyway, thanks for the post. Still working on perfecting my sopapillas!
