Apple Crisp II

I just loved this recipe. The big pan I made got eaten up in no time. This recipe is stupendous and so simple. The hardest part of the whole process was peeling the apples. Just great. Thanks so much!

Chicken Kathleen

Pretty darn good; although, I made a few changes. I had leftover chicken from a roaster that I shredded up - great way to use your leftovers! I also subbed cream of mushroom as my soup simply because we prefer the taste. I added some garlic in as well. Everybody likes the comfort foods around my house so went over well. Also I loved that my leftovers got used up. Thanks!

Mexican Pork Chops

We had this tonight and it was really good. I marinated 6 chops overnight with a rubdown of oil and half a packet of our favortie taco seasoning before browning. I also used a box of Rice a Roni Spanish Rice, because that was all I had on hand and it worked out fine. I added the remaining half of the taco seasoning and Rice a Roni packet to the tomato/rice mixture while simmering. I served with a tossed salad and cheese quesadillas(thanks to the poster who suggested that - was the perfect addition to this meal). I got many compliments from the family and this was super easy. Thank the Lord because anyone who's ever had a six month old to take care of knows about needing easy dinner solutions!!! Thanks for the post I will make this many more times - we really enjoyed it.

Shredded Beef for Tacos

I made a few changes to this but the basis of this recipe is great. I didn't use roast. My hubby bought chuck steaks which I had no idea what to do with, so I used them for this recipe and yum!!! I rubbed them down with my favorite taco seasoning(frozen at that) and added canned green chiles to the recipe ~ otherwise, followed as stated. Well, minus the cilantro because we don't care for it. It was delicious after 8 hours on low in crockpot. This made the best burritos and is so versatile could be a filling for many other dishes.

Breakfast Casserole I

This got so many good reviews that I thought it would be a sure thing, but I'm sorry we just did not enjoy this at all. Made this because I was cooking for a crowd and it did make a lot. The bread made the texture of the dish spongy, the bacon got soggy, the cheese burned, it tasted pretty bland, and hubby said the "the broccoli doesn't go." Just overall was not received well by anyone. I would have been better off making scramble or breakfast burritos. Who knows maybe it was the cook that was at fault? I will say that I followed the recipe to the tee though.

Taco Soup V

I have to say this was delicious. I added a few extras - instead of kidney beans I used can of corn and a can of sliced new potatoes. I also used more hamburger meat and ranch style beans with jalapenos instead of plain pinto beans. We garnished with crushed corn chips and shredded cheddar. This was a big hit around here -- got eaten all up by my hubbie and his friends over watching football. This was also so easy and I need easy with my four month old demanding constant attention. Thanks so much this is a keeper!!!!

Southwestern Green Chile with Pork Stew

YUM, YUM, YUM! Read the reviews on this one and they were mixed, so I was a little hesitant. Well, I thought this was great. It's a great base to tweak the seasonings to your family's liking but we liked it as written. For those who said it was too spicy ~ I don't think the recipe intends you to use jalapenos as your main chile. We used anaheim chiles and roasted them ourselves. You can pick up canned green chiles in the supermarket to skip that step of you wish. The addition of some jalapeno for heat is fine, but leave it at that :)..... This also tastes great with red chiles instead of green - I have made it with New Mexico Red Chiles and it is YUM, YUM, YUM. Very authentic and tasty. Thanks!

Toad in the Hole III

THIS WAS SO SIMPLE AND DELICIOUS! I made my version of the recipe due to what was on hand. So I'm not sure it was quite authentic, but still yummy nonetheless. Anyway, I used Hillshire Farm Smoked Sausage(cut into slices). I also added some cooked onion to the sausage and oil. To the pudding mixture I added some garlic powder along with the salt/pepper. Was crusty and delicious when done ~ I served this with a simple mustard(my family not keen on the onion gravy). Was very simple and a casual meal keeper. Thanks so much!!!!

Buttery Cooked Carrots

These are delicious. They were even a hit with the non-vegetable eaters in my household. The only addition I made was adding a little vanilla to the butter and sugar. Kicks the flavor up! They were delicious and easy. Thanks!

Baked Pork Chops I

DELICIOUS! I was skeptical at first because it seems like they cook for a very long time, but I am convinced now. These turned out melt in your mouth tender. I left out the seasoning salt(don't care for the flavor) and just opted for regular salt. They are soooo good and my hubby loved them. Thanks for a keeper of a recipe.

Make-Ahead Mashed Potatoes

Bierocks (German Meat Turnovers)

I can not explain how good these are! They were a huge hit with everyone, and I ate so much I thought I would pop. I did take a few shortcuts. I used bagged coleslaw mix, with shredded cabbage and carrots, in place of the head of cabbage. I also used croissant dough in place of the frozen dough. Thanks for a wonderful recipe!

Cottage Cheese Chicken Enchiladas

The flavors in this recipe were really good. I used flour tortillas instead of corn and they still turned out a bit mushy. I think next time - I'll try starting them without the sauce, and then add the sauce closer to the end of baking time. Is definitely worth trying again, thanks!
