Herb Roasted Pork

OH SO GOOD! I wanted something different for our Valentine's Night Dinner and this was AMAZING! I played it safe, and picked this recipe for all the good reviews. I followed the recipe exactly... only doubling the sauce. It was amazing and I got many praises from the hubby! Thanks for the fantastic recipe. I will make this again and again.

Cheese and Broccoli Chicken Soup

Simply the most delicious soup! My one year old ate and ate this soup, with his hands(messy of course), and kept saying mmmmmm. My husband and I loved it equally as much. In fact, my husband said "you mean, you made this from scratch, mmmmmm". I kept everything the same except I substituted onion salt for regular salt. Also, I added some garlic powder, onion powder, and I used chicken broth in place of the boullion/water. Thanks and I mean thanks for the wonderful recipe!

Julia's Easy Slow Cooker Chicken

I don't know how anyone would not like this. My husband and toddler devoured it! I used only 4 breasts, added some garlic/pepper/parsley/paprika, and omitted the cornstarch. I also added potatoes and carrots to the cooker first. I then threw in some frozen peas about an hour before serving. It was a delicious meal. I just added a salad and some bread - voila, tasted great and was easy! Since I have become a mom the slow cooker has become my very good friend, lol. Thanks for the post!

Pear Bread I

This recipe was pretty good use of an abundance of pears; although, it was a bit sweeter than I was expecting. I did make a few changes though, as follows: 1 cup brown sugar, 1 cup white sugar, and 4 cups chopped pears rather than the 2 shredded. I made 24 muffins with this recipe rather than 2 loaves. Muffins are easier for my toddler to hold on to, and I found the consistency was more cake like and suited to muffins. I would make this again, as we really enjoyed them but I may decrease the sugar a bit the next time. Thanks for the post. It was a good basis to put my own spin on it.

Chicken, Rice and Vegetable Soup

I am always looking for healthy meals that will suit mommy, daddy and toddler. This is a really healthy meal, but as written a little on the bland side. I made as is the first time, and just ended up freezing in small batches for my one year old. The second go round, I added parsley; bay leaf; garlic; thyme; and sage(it was great). The proportions are great in this recipe, but I think it needs a few herbs to add flavor, as we all enjoyed it the second time!

Summer Chicken Burgers

This recipe was 5 stars with just a few minor changes!! Add some bacon - it is so delicious on this sandwich! Also, the avocado can be mashed up with the mayo to make a delicious spread(easier to eat that way). We use a little less mayo and add some garlic powder to the spread mixture. YUM!

Oven Fries II

I thought this was super easy and quite good!! You can use the base and add whatever seasonings you like. I peeled the potatoes before microwaving them, and then followed the recipe exactly. My potatoes did not end up soggy at all, in fact, mine were really crunchy on the outside. I was quite amazed at that! Good stuff. Thanks for the recipe.

Easy Bake Brisket

If I could give this recipe ten stars I would, YUM!!! I made this for Easter in a pinch, because the store was OUT of ham. I thought it was a disaster because I have never made brisket before. It was a huge success and my husband who is a major ham fan stated that he didn't miss it at all!!! Anyway, followed the recipe exactly only doubled the ingredients because my brisket was over 9 pounds. Also, I slow cooked this at 225 all night long(covered of course). Was just so easy and so delicious!!! THANK YOU! --- P.S - The leftovers(if you have any) make great BBQ sandwiches as well as taco filler, with the right seasoning additions, oh my goodness this is so versatile!!!**Edit** to say that the second time I made this I used the crockpot. I MUCH preferred the slow and low oven cooked version that I utilized the first time. I suggest the oven preparation for sure.

Carolina BBQ Pork Sauce

Oh my goodness, I think the only way a person could enjoy this sauce is if you enjoy drinking vinegar from the jug. Holy cats!!! I tried it and it's not for our taste. I think it would also be a nice way to ruin a good piece of pork. Thanks anyway.

BBQ Chicken Sandwiches

Well, I had all of this on hand so I thought I'd give it a try. Threw the chicken with half of the sauce into the crockpot. When chicken was done, shredded it and added the rest of the sauce to simmer for 30 more minutes. I found the sauce very different than what I'm used to here in Texas. I did reduce the amount of garlic and mustard because wow it was a lot! Reminds me of that orange sauce you can get in a bottle(the name of it escapes me at this moment), as it is very tangy even with the addition of the liquid smoke. I think I'll stick with something more suited to our tastes, but I can appreciate the new experience.

Cocoa Fried Chicken

As the recipe is written, the cocoa powder really doesn't add much. I have made chili in the past with cocoa powder so I added some chili powder and garlic powder as well. It was fantastic with those additions. Cocoa really enhances chili flavors. Try it this way you'll like it!!

Polish Mistakes

Wow we thought this was scrumptious! I served this for dinner on a thick piece of Texas Toast along with mashed potatoes and garlic butter broccoli. I used the recipe as is except for the addition of 1 TBs each of garlic powder and onion powder(omitted the chopped onion). I also added a little black pepper. My husband went crazy over this and I thought it was fantastic as well. Very filling and also tasted good over mashed potatoes. Not bland in anyway! Loved it thanks for the post.

Beef Enchiladas

These were pretty good; although they are not enchiladas. These are more of an enchirito(hence the flour tortillas). All in all, the flavors came together nicely and they weren't too much trouble to make.

Empanadas

What a fantastic and easy to make dough!! I really love savory empanadas and this dough worked fantastic for those too. It may not be the easiest to work with - just have to make sure to keep your surface floured but turned out a great finished product!! Yummo!!!

Sopapillas

These were really good although I'm still searching for a recipe as good as my Grandpa used to make. Perhaps it was just Grandpa's touch! Anyhow, these did turn out well for me. I read the reviews and some had commented that they weren't sweet enough - well they aren't supposed to be. Sopapillas can be eaten with a savory dish as well as sweetened up with honey, etc. Anyway, thanks for the post. Still working on perfecting my sopapillas!

Ham Salad II

This was a fantastic use of leftover ham from Thanksgiving. I used half the amount of onion called for because my family probably wouldn't eat it otherwise. I used dill pickles in lieu of sweet relish, again my picky family's preference. I chopped it all in the food processor, which was so easily good! Then went to combine with the mayo and realized I was light on mayo. I ended up using half mayo and half ranch dressing. We really enjoyed it this way, but then we love ranch around here. I don't think it needs the salt called for and didn't add it. I thought the green bell pepper added a delicious crunch! Thanks for the post. Made a darn good sandwich. This is also great served on lettuce leaves with cheese sprinkled on top. YUM!

Sticky Monkey Brains

Thanks so much for this post!!! My grandmother used to make this for the holidays. I never knew how she made it until now and we all love it so much. She is really sick now and not able to pass on all her fabulous recipes. This was very close to what she used to make(though I think her biscuits were from scratch and also put some raisins in). Anyway, it made the whole family feel great to have this at Thanksgiving again. Thanks so much and everyone should encourage their little girls to grab up Grandma's recipes because they will surely want them someday!!

Cucumber Shell Salad

Man this is good stuff and very simple! Made a few additions to this by adding some cubed smoky ham and cubed cheddar. The ham and cheddar added a smoky saltiness that was a perfect accompaniment to the flavors of this salad. Wow this made a stupendous salad that could be served as a meal. Thanks we really enjoyed it.**Edit** to say that the pasta will absorb the ranch dressing, so if making ahead of time you should either wait to add the dressing right before serving or have extra on hand to remoisten the salad as needed.
