Slow-Cooker Chicken Tortilla Soup

We had our first snow here today, and this was the perfect soup for a cold day, just absolutely excellent! I didn't have corn or cilantro on hand, so I omitted those items. I replaced with one can of pinto beans and one can of white hominy. I did precook my chicken as the recipe suggested. Also, I needed it done faster so I brought everything up to a boil on stovetop, then lowered temp to simmer for one hour. We garnished with crushed tortilla chips, bagged variety, and shredded cheddar. My three year old ate his entire bowl, that's rare, and we thoroughly enjoyed it as well. It's definitely something I will make again and again, simply delish! Thank you for such a great recipe.

Sensational Chicken Noodle Soup

Thanks so much! I needed the proportions for a basic noodle soup, as I was making turkey soup for a crowd. I scaled it up to 12 servings, and the proportions were spot on. I added some parsley and garlic powder. A simple and delicious soup... just what was needed! Thanks much.

Delicious Ham and Potato Soup

I can not believe I forgot to rate this one! It is the most DELISH potato soup ever, and so economical to make. I always use this recipe, but sometimes sub the meat, if I have no ham on hand. I will sometimes use bacon, or smoked sausage, in lieu of the ham. Just be sure to adjust the salt content according to your cut of meat. You may not need any additional salt. We serve with crusty bread and top with shredded cheddar. The recipe never fails, a total crowd pleaser, so thank you so much for the delicious recipe!

Make-Ahead Mashed Potatoes

I can't believe I have never rated this. I have been using it for years now. These are the most delicious and rich potatos, omygosh, I can't say enough! I have occasionally topped with crispy bacon bits... even more decadent. I am making them again for Thanksgiving. These are my absolute favorite!

Melissa's Green Chile Stew

My Grandma and Grandpa were the masters of this dish. It's definitely a comfort food. The proportions in the recipe are good, but I go through the whole process of roasting and peeling green chile when I make it. I cook the onion along with the beef and drain. We like ours with more liquid, so I always add beef broth. In addition, the posted recipe didn't use garlic, but it is a must have. Green chiles without garlic is like pizza without cheeze. It's a great base to tweak to your own liking. Also, it's really inexpensive.

Yellow Squash Casserole

We though this one was okay. Mine seemed dry... not sure if that was the intent or not. I was expecting a little more "sauce" in the dish. I have another recipe, which the whole family preferred to this, but thanks so much for something different.

Nana's Squash Casserole

MMMMMMMM so good. I subbed a box of the "store brand" cornbread stuffing for the cornbread, as that was all I had on hand, so I left out the salt. I also halfed the amount of butter, and added extra cheese. Very small adjustments that were made, and I must say this was so good. I served it with ham, and it went perfectly, but I liked the casserole better than my ham(LOL). Thanks so much for a great recipe! It's a keeper!

Sweet Restaurant Slaw

FANTASTIC! I'm usually not a coleslaw fan, but my husband and toddler love it; so I thought I'd give this a try. I chopped my own head of cabbage, with 3 carrots, in the food processor. I opted for onion powder, rather than fresh, and it all came together so nicely! I also used celery seed, instead of poppy, because I didn't have the poppy. The dressing is so good, I even loved this, and I normally don't touch the stuff. Of course, my husband and toddler gobbled it up as well. Thanks so much... I will make again and again.

THE Pasta Salad

I love this salad. I often change it up, depending on what's on hand, but it's always a hit. The sauce is wonderful, and I always make extra, as I tend to add more veggies(ie.; celery, carrot, bell pepper, tomato, cucumber). I also sub the swiss for cheddar, because no one here will eat swiss. Basically, this is an awesome base recipe to suit any liking. Thanks.

Mom's Country Gravy

I have always been terrible at gravy, until I tried this recipe, YAY! My husband loved it and he's definitely a gravy man. I made chicken fried chicken, for dinner, and used the oil from that rather than plain oil. This would also be delish with the drippings from sausage or bacon. Thanks so much... the proportions are spot on and I've always had trouble with that.

Best Tuna Melt (New Jersey Diner Style)

These came together really quickly, but weren't anything special to us. I didn't think the flavors came together, very heavy tuna taste, and mine were salty for some reason. If I were to make again, I would omit the pinch of salt, but I probably won't make again as my toddler wouldn't even touch it. He normally devours all things tuna. Thanks for the new experience though.

Swiss Steak Quick and Easy

MMMMMMM! I had never attempted swiss steak before, and I'm so glad I found this recipe. What a simple, economical, and delicious meal! I made only a few changes. I deglazed the pan, with the tomotos and a bit of water, before adding everything else in. I also added in some celery, a carrot, and a bell pepper... the more veggies in the pot... the more my toddler will eat! I served with mashed potatos. We had a cold and rainy day here... this was perfect... EVERYONE loved it.

Banana Crumb Muffins

These are really good and came together so easily. I found that I was out of brown sugar, so I couldn't make the crumble. Instead, I added some cinammon to the batter, and also used oil instead of butter for the batter. They were a delicious use of very ripe bananas. The recipe made 12 muffins for me. I'll definitely make again, with the crumble, as the combination sounds just divine!

Betty's Burgers

OMYGOSH DELISH! I made these burgers tonight and we loved them. I did have to make a few subs, based on what I had on hand, but same concept with minor changes. I subbed the cheeses... I used cheddar and mozarella. I'm thinking it would be really good with pepperjack as well. I used a Poblano, for my green pepper, and it worked out wonderfully. The only suggestion I have is... make sure you get a really good seal around the burgers. A few of mine weren't sealed so well, and started oozing the cheese. I broiled them about 15 minutes per side, we added more cheese on top, and served. Thanks so much! These tasted great!

Tuna-Stuffed Avocados

I served this for dinner last night, and this is a delicious recipe. I made the tuna mixture in the morning, it goes very quickly, so that the flavors could meld in the fridge all day. I came home, prepared the avocados, topped with the tuna salad, added crackers to side of the plate, and we were good to go on dinner! When I made the tuna mixture, I added some garlic powder because I find it really compliments the avocado. I also used finely diced celery, in lieu of celery seed, because I didn't have the celery seed on hand. Then I added half of a peeled, seeded, and cubed cucumber. You can top with other veggies as well... tomatoes, sprouts, etc. This was healthy, refreshing, and everyone loved it(including my toddler). For my toddler, I just scooped out the avocado, cubed it, and added tuna salad on top. So easy and so good. Thank you.

Carne Adovada

Very GOOD! I often purchase the preseasoned, ready to cook, Adovada at my local Hispanic market. When I have the time to do it myself, I use this recipe. We love Adovada and this an authentic recipe. After reading some of the other reviews, I would suggest that people use the right kind of chiles. If not, the taste will not be the same... you can not sub regular chili powder for the New Mexico Reds. Thanks for the delicious post. We enjoy this recipe immensely.

Wonderful Short Ribs

Easy Tuna Casserole

Very good, quick and easy! Also kid friendly, which is essential around here. I've cooked it as written, and it's simple and yum. I sometimes add in sauteed onions, celery, and carrots; because the little one eats his veggies that way. I usually also add 1 tablespoon of garlic powder. Thanks much! Busy moms sometimes need simplicity!

White Sauce

GREAT! This base is fantastic for so many things... just add the spices/cheese/etc to adjust the taste. I have used this in all types of cuisine. I have even used this as a sub for the "cream of this or that soup," which is called for in a lot of the quick fix recipes. Easy to tweek, easy to make, and I know what's in it. THANKS!
