I used ground turkey instead of chorizo ...it tasted wonderful but was difficult to cut, next time I will only use 1 tortilla in between each layer

Eggplant -- Easy, Good and Tasty

everyone in my house loved this, I also made it for my Dad's B-Day...I made so much I froze some....popped 'em the oven and wah-la they were just as delicious as if I had made them fresh, even my girlfriends 9 year old ate 'em up!

very yummy and sweet, a different twist on the quick dessert, only thing....it needs to be eaten pretty quickly because the bananas will turn brown if refridgerated.

Irish Chicken and Dumplings

very good, I made this for St Patty's instead of the traditional corned beef and cabbage for my very picky sister and her equally as picky roommate, they both loved it, so did my teenage daughter, who mind you ate leftovers and finished off all of the biquits. I did however, use refridgerated grande biquits cut into 1/4's and rolled into balls, then dropped into the pot to cook. Next time I 'll be adding all the dough. I'd rather have too many dumplings than not enough!

Banana Coconut Loaf

my soon to be 16 yr old daughter made this tonight, with pineapple instead of cherries, it is very, very good! It smelled and looked so yummy while it was cooking that we ate it as soon as it had cooled down a bit, I'm sure tomorrow it will taste even better!

At first I was weary of this...but it was sooo good!, I didn't change a thing. The ketchup mixture is awesome!!! I made it exactly as it said and my entire family just loved it!
