Mama's Asian Chicken and Rice

HOORAY...My pickey family loved this recipe! We do not like spicy dishes so this was perfect for us! I did not have chinese 5 spice or orange peel so I didn't add them. I did add a pinch of ground ginger (I love this spice) when browning the chicken. I served it with sushi rice and edemame! It is now on my weekly dinner menu!

Twice Baked Potato Casserole With Bacon

I made it a bit easier. I used instant potatoes (made according to package) and didn't use sour cream (didn't have any on hand) or milk, instead I used half and half. I also topped it with 1tbs of bacon bits and parsley.

Fast and Friendly Meatballs

I love these meatballs! All I added was some garlic and basil seasonings. I baked them just like the recipes says and put them in the fridge. When ready to use them, I slow cook them! Delicious!!!

Schweinebraten Pork Roast

I made this in my crock pot and it was great! It only took about 3 1/2 hours on low (my crock cooks pretty fast) for my 2 1/2lb roast. I also cooked green beans (frozen) and carrots with it and they,too, came out fabulous!!

Deli Style Brisket

The gravy to this was awesome! I took the advice of one reviewer and sliced the meat after 3/4 hours. I also added beef broth (just enough to cover the beef) at that point to make certain it would not dry out. this gravy is a keeper-I am going to try it on other meat such as roast beef and pot roast. I think this recipe should also be listed under "gravy"!FABULOUS!

Classic Macaroni Salad

WOW! Fabulous-haven't had macaroni salad this good since we left New York. Just like they make in the NY deli's. I followed the directions exactly but left out the carrots and pimentos. I also used different colored peppers I would also suggest making it a day ahead, it tastes better the longer it sits in the fridge.

Jeannie's Kickin' Fried Fish

I made some changes....I used panko bread crumbs instead of the regular Italian bread crumbs. I added the juice of one lemon to melted butter, drizzled it on top and baked it (as suggested by another reviewer) It was awesome!

Antipasto Squares

I made this for lunch and it was great! I didn't use swiss cheese just the provolone and I sprinkled garlic and basil seasoning on top. I baked it in a ceramic dish and it came out perfect-not soggy!

Terrific Turkey Chili

This was my first time making chili and it was great! . I used 2lbs turkey. Browned it then threw it all in a crockpot on low for 6 hours. I changed some of the ingredients just because of what I had on hand. I added chili powder instead of flakes. I also added a bag of frozen 3 peppers and onions blend. I did not add the Chili peppers (we dont like it hot) and the zucchini (I couldnt find it this time of year). I will definately add it when its in season next time.

Pineapple Chicken Tenders

Teriyaki Sauce

I keep this marinade in the fridge so we can use it frequently as either a dipping sauce for salmon (I like it with panko crusted salmon) or as a marinade for chicken. I like it best in the crock with chicken and green beans (I use frozen green beans)-they come out so unbelievably tasty!!! And don't change a thing...it is great just the way it is written!

Stuffed Flank Steak

Very tasty! this is a very rich meal so be careful what you serve with it. Origionally I served it with Asparagus rolatina-not a good choice as both are rich. Now,I keep the side dishes light with just a salad and steamed vegetable.

Mother's Pot Roast

It was great! I lined my crockpot with frozen green beans and carrots and added the roast with the rest of the ingredients! I cooked it all day on low. Served it with thick egg noodles.

Steak Stir-Fry

I love love love this recipe! I use beef broth instead just because I always have it on hand. I also use london broil meat just because it cooks well and isn't chewy! I also use a bag of frozen stir fry veggies instead of fresh veggies!

Quick Gnocchi

These are great! I will never buy another store bought gnocch again!!!! Just make sure you make a double batch because they go fast! I followed the directions exactly escept I don't add salt to anything I make. I also let the dough sit in the fridge for 15 minutes as another reviewer suggested. I also roll each with my fork after I cut them! YUMMY!

Corned Beef and Cabbage

A really good corned beef! I used my crockpot and cooked it all day! I made sure I had enough water to cover the corned beef. I alsodidn't add cabbage because noone in my family eats it. A really good dinner!

These are very good. I use dried spices because I always have them on hand. Also, I use chicken broth instead od boullion because I, too, have that on hand. Goes great with Chicken or Turkey!
