Golden Rice Cakes with Sweet Potato-Ginger Sauce

I love this recipe! It's very time consuming, but I'll make a lot of the sauce and save it in order to cut back on prep time. Delicious. I add hot sauce to the sweet potato sauce to give it a little kick--habenero peppers go really well with the sweet taste.

Asian Roll Lettuce Wrap

My boyfriend absolutely adores this recipe. He likes the crunchy veggies and putting it all together. I think that the sauce is a little bland, and I have added ginger and garlic and hot sauce to make it a bit spicier.

Burrito Pie

Wow this made a lot of food. It was a little too goopy the first time we had it, so we used burritos to mop it all up. After refrigerating it for a day or two, it held up a lot better.

Delicious. The sauce makes the whole dessert. I added cinnamon and nutmeg for a little spice, and used cranberry pecan bread, which worked very nicely.

Mmmmm...these were a hit last year, and I'm going to make them again. Definitely buy pre-shelled pistachios. It's far too time consuming to try to shell them yourself.

Giant Stuffed Mushrooms

Oh, yuck, I'm sorry. I don't want to seem mean, but I feel really strongly about this recipe. The smell of the cilantro was overwhelming, and mixed with the groat, it tasted like wet dog. I added a sauce of tomato and sprinkled feta cheese on top, but this was still not enough food for my guests. I'm glad I planned dessert. I won't be making this recipe again.

Bread Machine Calzone

Serve with pasta? This was huge, and plenty of food on its own. I added ricotta cheese to the mix (probably should have mixed that with an egg first) to make it more like a pizzeria calzone. Great.
