Lemon-Lime Soda Gelatin Salad
My grandmother made this for as long as I can remember. After she passed & we discovered she never wrote down any of her recipes, I thought I'd never have it again. Thank you allrecipes! This is exactly the way I remembered it. I suppose it should be mentioned in the description that it is SUPPOSED to be softer than a traditional gelatin dish. There are quite a few negative reviews citing that as the source of their dissatisfaction, but as far as I know, that is the intended consistency. Just a friendly suggestion. =) Thanks for sharing this great recipe that brought back the taste of my childhood! =)

Beet Salad with Goat Cheese
Soooo good! And I took the lazy approach, using canned beets rather than fresh. Great flavor, contrast of flavors, and my whole family ate it up! I also thought it might be worth mentioning that I used sugar free maple syrup and it still came out great (just in case anyone else happens to have sugar free on hand & doesn't want to go buy another whole bottle just for one recipe.) =) Thanks for sharing!

Burrito Pie
This is a great weeknight recipe the whole family will love! My 4 year old scarfed it right up! Per the suggestions of other reviewers, I added dry taco seasoning to the meat & spread the refried beans on the tortillas as I layered them rather then mixing them in with the meat. I also doubled the black olives (because we love 'em!) and threw in about a half a cup of chopped fresh cilantro (only because I had some leftover from another recipe that I needed to use.) It was a great accent flavor and I really enjoyed it, although I am sure this dish would be quite tasty without it as well! I also bought round aluminum casserole dishes to make this in so that I could make 2 and freeze 1 (I am expecting baby #2 soon and convenience foods will be a necessity soon, I'm sure.) Thanks so much for sharing this recipe and thanks to the reviewers for all the great tips! I will definitely be making this one again! =)
