Cheesy Ranch Potato Bake

Reviewed: Feb. 10, 2011
I'm so glad I followed the advice of others and used drastically less butter; only about a tablespoon. It was plenty. Six tablesspoons would have made it awful and oily. Other than the butter I followed the recipe pretty much exactly. It was great.

Apple Pork Chop Casserole

Reviewed: Feb. 2, 2011
Great recipe. I thought the apples and raisins gave it a really nice flavor and made it more special than just pork chops and plain stuffing. Really easy recipe...just serve with a side of veggies and makes a great easy meal. My husband loved it. I used a whole granny smith apple and I tossed in a few extra raisins. yum

Guinness® Bread

Reviewed: Jan. 11, 2011
Great recipe. The bread has a really nice flavor and texture. Mine came out really dark and a bit burned around the edges. Next time I'll take it out of the oven a few minutes early. I'll definitely make this one again.

Chicken and Corn Chili

Reviewed: Nov. 22, 2010
I thought this was a great recipe. A nice change from regular chili. I didn't follow the measurements exactly, but mine came out less like a chili and more like a southwestern-style pulled chicken. Much thicker than a chili-not a whole lot of sauce. I don't think I would eat a bowl of it plain, but it makes a great base for meals. For example, Last night we had salads topped with tortilla chips, sour cream and the chili. It was AWESOME. Tonight I am going to use the rest to make enchiladas, and this will make a great enchilada filling. Since you are shredding the meat anyways, why not use bone-in split breast and just pull off the skin before cooking? That would be cheaper. Also I used a 16 oz bg of frozen corn(I don't like canned). The corn gave it a really nice sweetness. I used a can of small red beans and I thought they went perfectly.

Easiest Pot Roast Ever

Reviewed: Oct. 17, 2010
Very good and definitely the easiest and quickest pot roat recipe ever. I didn't give it five stars only because I thought it was a bit bland. I will definitely be making it again, maybe add some cream of mushroom soup or something to make the sauce thicker and give it some more flavor.
