Bacon and Broccoli Salad

One of the best ways to get my family eating greens! I blanched the broccoli for 30 seconds in boiling water... makes it bright green and improves the texture. I used red onion. I add cranberries or raisins and sunflower seeds or cashews. Go easy on the sugar, especially if you add the dried fruit.

Tangy Spare Ribs

Fantastic! My sauce didn't get on the ribs until the last hour instead of 1 1/2 hour, and it was fine. I added some Liquid Smoke and a squirt of honey, but otherwise followed this recipe exactly, and it gave fabulous results. Don't be intimidated by oven-made ribs... these were awesome!

Classic Macaroni Salad

Way too sweet... I used closer to 1/3 cup of sugar and it was still too sweet. But it's a start; you can mess around with it and make it yours.

Sausage Risotto

Nice simple intro to risotto if you're intimidated by it (like I was for years). Coincidentally, one box of Pacific Organic Chicken Broth equals three and one half cups... how convenient! I subbed fresh limas for the peas (and added them after the first 3 c. of broth but before the additional broth), and added a couple Tbsp. of butter just before adding the rice for a nuttier flavor. This was SOOOO GOOD! Takes a little time (closer to an hour for me) but so worth it!

Chocolate Mint-Filled Cookies

I only got 32 cookies (that's 64 halves) out of this recipe. Perhaps I'm using the wrong size of mints? I was using the York peppermint patties, in the Christmas wrapping, about 1.5" in diameter. The candy's pretty thick, and when you press the two halves together to make the "sandwich," what happens is that the warm cookie kind of smooshes around the candy. These make big cookies, and not a lot of them. However, it's a great recipe to make with kids; my 4-year-old son loved "helping" me make them. And I do like the cookies by themselves, without the candy. They're light and dome-shaped. With a bit of peppermint, vanilla, or orange extract, they'd be pretty good all by themselves. The dough was too wet to form balls and roll into sugar; I just dropped it by spoonfuls onto the pan. But you could sprinkle a bit of sugar on top for that sparkly effect easily enough. I probably won't do this recipe again as written. I'll try to chill the mints and slice them across (like a bagel) to make the finished cookies thinner. Happy holidays!

Chocolate Earthquake Cake I

a nice surprise! easy and sinfully yummy. i sprinkled powdered sugar over the top (had to spruce it up a little, it was for a birthday cake) and just about all the lil kiddos vacuumed this up! quick to throw together, too. i baked it for about 10 minutes past the stated time... it was still sticky but not wobbly-wet in the middle anymore.

Tangy Hawaiian Chicken

i was looking for something quick and was inspired by this recipe. i put together the marinade portion, adding about a half-cup of water mixed with a tablespoon of cornstarch, which turned the marinade into a silky smooth sauce. then i diced the chicken and sauteed it, adding the sauce and a bunch of precooked rice. i like the combo but would add some red bell pepper next time for color and contrast, and cut WAAY back on the soy sauce (down to a quarter cup, i think). would be good as a tofu marinade for the vegetarians in the house, too.
