Baked Oatmeal II

I split the recipe in half as I only had 1 1/2 cups of oats. I used a little bit less brown sugar than the recipe called for and I added a little more vanilla extract. I used 1/2 cup dried cranberries and I also added 1/2 chopped walnuts. I baked it in a bread pan (I think like 4x9 or 4x8) for 30 minutes and it came out perfectly golden brown and nice and moist. It was kind of hard to cut because it was so crumbly but it tasted awesome! It had the crunchiness of the walnuts I added and the tartness of the cranberries mixed with the sweet brown sugar. It was very flavorful and delicious!

Soft Frosted Sugar Cookies

I love the Loft House soft sugar cookies and they're my absolute favorite cookies in the world! I had a craving for them today so I decided to make them but I split the recipe in half. I used butter instead of shortening and took away about a 1/4 tsp salt. I added 1/8 tsp cream of tartar to the dough. I refrigerated the dough for half an hour and rolled the cookies into balls and pressed them down to 1/4" thickness with a glass. Baked them at 345 degrees F for about 8 minutes. They weren't as soft as the Loft House cookies and had a cornbread-like texture. The frosting wasn't really like a frosting, it was like a sweet grainy mixture. It had a very weird texture. These cookies were ok but did not taste like the storebought ones.

Good Old Fashioned Pancakes

These pancakes are soooooo fluffy and moist! They were also really easy to make! I read a few reviews before making them and I reduced the salt to 3/4 tsp and I added 1 tsp vanilla extract. They were really yummy and my family said they were the best pancakes they had ever had and they said they were the fluffiest the had ever had! Thanks for the wonderful recipe! This is now my new pancake recipe and it was certainly a big hit with the family as well.

Coffee Cake in a Mug

Yum! I used a little bit less than one tablespoon of butter for the batter and it came out fine. For the applesauce I used cinnamon applesauce and I added a few teaspoons of chopped walnuts to the topping. Microwaved for 80 seconds and BAM! Instant coffee cake!

Sam's Famous Carrot Cake

This cake is delicious! Very moist and flavorful. I used 1/2 cup of cinnamon applesauce instead of the oil so it was a little bit healthier. I also grated the carrots in my Ninja food processor. Baked it in 2 round 9" pans and frosted it with my special homemade cream cheese frosting (recipe on my page). It came out as a super yummy carrot cake, possibly one of the best I have ever tasted (and made!) Thanks for sharing the recipe, Brian, and may Grandpa Sam and his famous carrot cake recipe live on!
