Panna Cotta

Served to guests with whipped cream, strawberries and blackberries to rave reviews. However, it doesn't actually say to add the vanilla extract anywhere in the recipe which nearly resulted in a disaster. I realized after I had poured them into the ramekins and put them in the fridge, luckily before they had started to set.

Ham and Asparagus Fettuccine

Made this with a few changes and it came out great. I used prosciutto instead of regular ham, and used 1 cup milk and 1 cup heavy cream instead of 2 cups of heavy cream. I had a whole pound of asparagus on hand so I used more than the 8 ounces called for. It also made more sense to use penne or ziti since they are the same size as the cut asparagus and easier to pick up.

Linguine in Spicy Red Clam Sauce

Very flavorful, I was told that it was restaurant quality. Went with the vegetable broth and a few more anchovies than called for. I must say that the reviewers who gave this one star and/or called it 'inedible' either did something wrong or don't like clam sauce; this is five star all the way.

Fired Up Southwest Fajitas

I made these with chicken instead of steak and added extra lime juice to the marinade. A little spicier than I would have imagined for fajitas, but that's not a bad thing. It was very tasty and the meat was tender.

Beef Stew VI

Great, simple stew recipe that I've used maybe a dozen times. I probably use less oil than called for, and add about 1 tsp garlic powder to the meat and oil right in the beginning for extra flavor. I've had better results letting the meat simmer for 2 hours before adding the veggies rather than 1 hour. Good stuff

Black Bean and Corn Salad I

Made this for my carnivorous family and they loved it. Used fresh cilantro instead of dried and threw in some green bell peppers. Good for lunch the next day, too.

Bean Quesadillas

Made these for my meat eating family and they couldn't get enough. I like to use my George Foreman grill to brown the tortillas instead of a skillet. It goes faster since you can do both sides at once, and its healthier since you don't need oil.
