Lemon Crazy!

Lemons, Lemons! I must be going lemon crazy! Have you ever had a craving for a certain flavor that soon turns into an all-out obsession? Maybe this all started with the return of spring and the light and fruity dishes it inspires? Maybe it is the subliminal message the antique picture of lemons, hanging in my kitchen, has been secretly sending me for years and I am just now receiving. More than likely it really began with the need to purchase lemons by the bag full to keep in a bowl next to my cute French bread box with lemons painted on it.

As the lemons in the bowl started to ripen, I began to make fresh squeezed lemonade by the gallons! The question I asked myself here is, “Why have I purchased powdered lemonade mixes and concentrates for most of my life?”

Of course I made several batches of lemon bars for the roofing crew at one of my rentals a few weeks ago. These super simple bars always Wow even the fussiest of eaters. David, one of the crew, swears he does not care for sweets and desserts yet politely asks for just a taste. He secretly hopes I didn’t notice as he quickly followed that up with two more full size bars. I just smile to myself and accept the compliments graciously.

Easter weekend I found myself home alone with just my dogs, Rocket and Astro, so I kept myself busy in the garden and the kitchen so I wouldn’t get too home sick for Montana. Not having anyone to cook for as well as eating alone has a way of dampening the creative cooking juices. However, I was not going to feel sorry for myself and instead built a mini gazebo for my fairy garden and prepared Lemon Mustard Chicken Breast with herb and butter angel hair pasta, fresh spring peas and a Grey Goose Lemonade…for one. I fancied up my TV tray and ordered The Hobbit part two on Netflix.

Are you wondering if my craving has been satisfied? Nope. I’m just getting started! Fortunately, I have this groovy new subscription to AR. I am having so much fun experimenting with so many lemon recipes. I had no idea the variety of dishes. You either? Go ahead and type in lemons in the search by ingredient bar, it is fun! I wonder if any of the other AR cooks have a folder in their recipe box titled Lemon Crazy.

The week following Easter, I made the AR recipe, Grandma’s Lemon Meringue Pie. I was making this as a ‘Thank You’ gift for my friend, Mary, who has given me her old exercise bike. However, I have recently been informed that Mary has begun her training and calorie counting in preparation for this seasons 5k & half marathon races. Giving her a whole lemon meringue pie seems kind of mean now. No, I did not eat the whole pie myself…yet.

During the last week in April, I am having my friend, Pam, over to my house to work on QuickBooks and art projects. I am going to prepare my German Hot Pot menu complete with Grandma VanDoren’s White Bread. I have just finished baking the Blueberry Lemon Yogurt Cake. The Super Lemon Ice Cream is in its final freeze.

Here, I must pause a moment and reflect on the ice cream I just tasted….. Quite possibly the best ice cream I have ever had, ever! Oh my, I just can’t find the words for this creamy, lemony goodness! It reminds me of Italian Gelato, the real stuff from Italy.

Tomorrow is Wednesday and the last day of April. I suppose it is about time to decide on my final lemon menu to wrap up my crazy lemon experiment! Will it be the Grilled Shrimp with Lemon Aioli or the Lemon Trout ….maybe the Grilled Lemon Yogurt Chicken with the Greek Garlic-Lemon Potatoes….. Lemon Cupcakes with Lemon Cream Cheese icing? ..... Lemon Apricot Cake or …..Okay, now I’m just being silly!

So when life gives you lemons…make lemonade! (Sorry, I couldn’t resist)

I love lemons, too! There was a pharmacy that sold ice cream when I was a kid, and I always ordered the lemon on a sugar cone. It was so good! And homemade lemonade is a must in the summertime. Now, I have to go decide what to make that includes lemons.... :)

Welcome to AR! It's not that I don't like lemon, because I do...It just doesn't appeal to me on foods that others (& you) love it on. Potatoes? Ice cream? Shrimp/Fish? I don't really use many condiments, as I love the food's "unobstructed" flavor. Mayo is my favorite, which I can put on anything when I want enhancement...Also want to say that I'm into miniatures, too! I make them - especially plants (fake) and you just reminded me that I've got to make my own "Fairy Garden" with real plants...I suggest that your next "obsession" should be KIWI - an under-used ingredient that I love! Happy cooking!

I wish I could isolate and just love one thing. That way, when out of the item, I could quit eating. My problem is that I like too many flavors, lol!

My Mom passed away about 30 years ago and I love that each of my siblings has preserved one or more of her recipes and have made it their own. Doug makes her BBQ ribs, Tammy makes the Thanksgiving dinner. I keep the Montana Chili alive. I will have to ask Jeff which one he makes?
