Chocolate Chip Banana Cookies

I also used the peanut butter version of this recipe and decreased the salt to about 3/4 tsp. This is a fluffier type cookie that doesn't spread out much. Love the fact that it uses whole wheat flour and oats. I also substituted fruit puree for the other half of the butter. Healthier alternative to a traditional chocolate chip cookie. Plan to try next time without the peanut butter for a totally different taste. These are even better the second day. My teenagers loved them.

Habanero BBQ Sauce

I helped my 14 yr. old son make this to go with pork chops. We halved all the ingredients since there are only three of us who enjoy spicy food. It was delicious-sweet and spicy, a great combination. My son did add a little extra ketchup and a small amount of spicy bottled BBQ sauce because he was afraid it wasn't going to thicken up enough. Would definitely recommend you try this sauce.

Sour Milk Spice Cake

This was a great use for some sour milk I had on hand. I used 1/4 c. prune puree (prunes/water-don't knock it 'til you've tried it!)for the oil and replaced some of the all-purpose flour with white whole wheat flour. Since I used an oil substitute, I reduced the oven temperature to 325 degrees and baked for 20-25 min. Delicious! Would also be nice with a light glaze drizzled on top.

Banana Crumb Muffins

I'm always looking for recipes I can tweak a little to make them a little healthier without sacrificing flavor. These were moist and delicious even with substituting some of the sugar with honey and some of the flour with white whole wheat flour. My kids were none the wiser and loved them!

Healthier Best Brownies

I was really hoping this recipe would be "the one" my kids would love and we could share without guilt with their sports teams. I love that they are made with the white whole wheat flour and the texture was good. I baked mine about 15 min. (because my oven bakes some things a little quicker), and they were still a tad dry. They do come out very thin and somewhat cakey, which I don't mind. I opted not to make the frosting because my teens don't like the taste of honey, but they needed a little more sweetness for our taste. May try doubling these and modifying some of the other ingredients next time.

Zesty Quinoa Salad

Looove it! The first time I made this I allowed the olive oil and seasonings to sit for a while in the bowl before adding to the quinoa. It looked like more oil than was necessary, so I added the oil mixture by spoonfuls to the quinoa and other veggies, until I had all that I wanted. We also aren't huge tomato eaters, so I reduced this amount considerably. Second time around I used just over 1/8 cup of oil and nearly doubled the red pepper flakes. (I like a little spice.) Definitely a new favorite!
