Pineapple Ice Cream

Used fresh pineapple, pureed is the blender (a little more than a cup and a quarter of purée). Added a capful of vanilla extract. Husband said it tasted like the Dole Whip they have at the Magic Kingdom (major compliment!). Batch fit perfectly into my Cuisinart Ice Cream machine. Took about 20 minutes to freeze.

Very good...did not use wine (fresh out!), used dried herbs (my plants aren't looking great!), and did not add final drizzle of olive oil (forgot too...don't think it needs it). The flavour of the soup was lovely, and we are looking forward to making this again and playing with the vegetables. We think that broccoli and cauliflower would be great, as would mushrooms, leeks, asparagus, corn, chickpeas or pretty much anything else you had hanging around. Thanks for the healthy, versatile recipe!

Roasted Garlic Cauliflower

Delicious new way to cook cauliflower. We both loved it. Doesn't need 3 tbs of oil though, next time I will use 1.5 tbs. Also doesn't need as much Parmesan, 2 tbs was plenty. I will definitely try some different herbs from the garden also.

Boiled Chicken

Cooked mine a bit longer, about 2 hours. Stock is great, chicken tasted good, but because the carcass broke down so much, it was difficult to remove all of the small bones from the meat. Make sure you double check the meat for bones!

Broccoli Chicken Divan

Followed this recipe exactly using chicken from "Boiled Chicken" on this site. It was quick and tasted pretty good. Could use a bit more flavour, but not bad for a quick family dinner. Make sure you add lots of fresh ground pepper to the sauce.

Addictive Sweet Potato Burritos

Very good and very healthy. Flavours were just right. Like other reviewers, I used black beans in place of kidney beans and left them quite chunky when I mashed them. I baked the sweet potatoes and scooped them out and mashed them very smooth with salt and pepper. I used reduced fat old cheddar and whole wheat tortillas. Served with shredded lettuce and chopped tomatoes, green onions and green peppers and light sour cream. We both loved them. They are quite large, I couldn't finish mine; next time I may make them in the 6-inch tortillas. I froze ten of them, and both my boyfriend and I are looking forward to taking them for lunches! Many thanks for the recipe! *UPDATE* Just a quick note on reheating the frozen burritos...It works perfectly in the oven from frozen. 30 mins wrapped in foil at 350, them 15 mins unwrapped to crisp them up. Better than when I first made them!

Meat Pie (Tourtiere)

I made this wonderful tourtiere twice over the Christmas season. I used frozen pie crust because pastry scares the bejesus out of me. The pie is absolutely perfect, however I do recommend going with the 1lb of pork to 1/2lb of beef ratio that others have reccomended. I tried it both with this mix and with all pork, and we preferred the flavour with the beef mixed in. Everything else should be left exactly as is. A bit time consuming, but totally worth it for the holidays. By the way, it makes more like 6 servings, not 8, unless you are making it as part of a buffet. Thanks for the new Christmas tradition!

Boston Baked Beans

We enjoyed this recipe, and it was easy, however my beans cooked more quickly than stated. They also retained to much water, so next time I'll add less of the cooking liquid. The flavour was lovely though. I only used half the bacon to make it a bit healthier; I chopped it up and layered it as directed and it was plenty. Thanks for the recipe!

Zucchini and Tomato Casserole

This was very good. I used all basil because my basil plants are thriving while my dill doesn't seem to be dealing well with the heat! I'm not sure if we would have liked it as much with dill. I also added a crushed clove of garlic to the zucchini. Both my boyfriend and I really enjoyed it, but next time I think I will use half Romano and half Parmesan. Thanks for the recipe.

Chicken Breasts with Balsamic Vinegar and Garlic

Made this tonight for dinner. The only changes I made was to increase the garlic cloves (used 8) and added some extra broth (I didn't measure, but probably an extra half cup). The chicken was super moist and tender, and the sauce was to die for. I served it with white rice cooked in chicken broth and a green salad. Two thumbs up! Thanks for the recipe.

A Fragrant, Spicy Rice

I'm only giving this recipe 4 stars because I made a few small I made it, we would give it five stars. It tasted like something you'd get from an authentic Indian restaurant! I didn't add the green onions or peas to the rice; I thought they would overcook, so I added them to the lentil mixture just before I stirred in the rice. I also added a big handful of coarsely chopped cilantro at this point. I substituted chicken broth for the vegetable (it's all I had), and found that the lentil mixture took an extra half cup of broth. Otherwise I followed the recipe to a T. This is a delicious, healthy and versatile recipe; next time I'm going to add some cauliflower florettes.

Roasted Rack of Lamb

Absolutely awesome. Everything was perfect, including the timing (12 mins. for rare). Served with "Greek Style Potatoes" from this site, some really good olives, and my own asparagus recipe (with tomatoes and garlic, which I'll be posting tonight). Incredibly romantic dinner for two, with leftovers for lunches to remember it with!

Asian Roll Lettuce Wrap

This is awesome, fun, and healthy! The only change I made was that instead of making the meatballs, I simply browned and crumbled the meat in a frying pan, drained the fat, then added the soy, garlic and ginger and sautéed for another 2 minutes. We ran out of lettuce near the end, so we wrapped some of the rolls in rice paper wrappers, which was also delicious (and easier and less messy to eat). Next time I think that we will wrap them all in rice paper, and add shredded lettuce to the rolls. A must try!

Onion Roasted Sweet Potatoes

I scaled the recipe down for 1 sweet potato...I used about a third of the packet of soup mix. I lined my pan with foil, and tossed the potato chunks, the oil and the soup mix in the pan to save on clean-up. I stirred about every ten minutes. I didn't have any problem with sticking, but like some other reviewers mentioned, many of the onion falkes burned pretty badly. The result still tasted OK, I picked out the most charred pieces...but I definately wouldn't serve this to anyone I love!
