My favorite things to cook
Chicken - you can just do SO much with it! Baking overall - the end result is usually beautiful and OH so yummy. Spices - the combinations are ENDLESS. You can skip butter and salt and just make up for it with different spices...amazing!
My cooking tragedies
"Smokey Chicken" (although not a TRUE tragedy, just funny) My Cooking For Dummies book told me how to truss, roast and carve a chicken. I thought, "Perfect, even I can do this!" Unfortunately, they didn't tell me I should cover it while roasting. Smoke started to billow out the oven door when I opened it. It set off the smoke alarm and I had no help to stop it. (Hubby was on the phone - GRRR) I realized too late that the smoke alarm was monitored and setting off the house alarm outside, so now the whole street knew. To make matters worse, the fire department responded to the call so the remaining streets in the neighbourhood knew too! (How embarrassing.) However, the chicken turned out beautfully done and nicely browned! Great recipe, but I haven't made it since!

Slow Cooker Chicken Creole
My husband LOVES this recipe. I've converted it from crockpot to oven and used a homemade seasoning instead of store bought. The creole seasoning I used was by JOSLYN here on AllRecipes: I layered in my pot as follows: chicken - 1 tbsp seasoning sprinkled over top - vegetables - 1 tbsp seasoning, repeat until ingredients used up or pot is full. For crockpot conversion, I used my cast iron dutch oven covered at 325F for 2 hours. Worked beautifully.

Chocolate Trifle
To. Die. For. Easiest thing in the world. You can either bake the brownies yourself, or buy a few packages of the Two Bite brownies to throw it together quickly. Either way it's awesome. I have yet to find someone that doesn't like it.

Honey Balsamic Vinaigrette
Easiest thing in the world to make. I did a taste test before adding the tbsp of sugar and it was already pretty sweet, so I didn't add the sugar. Actually did this as a dressing to go with "Beautiful Salad" that I found here at as well. Loved it!
