Kristen's Parmesan Roasted Potatoes

Tried this exactly as written other than using Lite Salt. I used red potatoes. Made it for the first time for guests and we all enjoyed it greatly. As some reviewers suggested, I did lightly spray the parchment paper with Pam and had no problem with them sticking at the time I turned them or when I removed them to the serving dish.

Hungarian Mushroom Soup

Made this today as written using button and crimini mushrooms. I will definitely make it again. Delicious! This is an earthy and very filling soup that is quite eye-appealing as well. Served with a chewy, artisan bread.

Lemon Freeze Pie

This is mild lemony creamy pie... so good we didn't wait for it to thaw but ate the first slice frozen. Soooo simple to make. I did not have fruit cocktail at the time but will make it with next time. I also did not use 9x13 but a ready-made graham crust which made a nice high pie.

Honey Baked Chicken II

V-e-r-y G-o-o-d!! I didn't have quite enough butter, but it was apparently okay, as we did not miss it (or need it). I will probably increase the curry next time for our tastes. I used skinned boneless chicken thighs that I had on hand. Leftovers were equally as good! I will use this for pork, as well.

Chocolate Mice

W-h-a-t a HOOT! These little critters turned out really great! I used the recipe using Oreo cookies. Having read other reviews, I watched out for adding the tails and eyes. I punched little holes with a toothpick for the eyes, then put them in the freezer. Later, I dotted the eyes with gel icing (no dragees on hand)and the licorice tails poked in the dough just fine. I made a few tails with canned decorator icing using the smallest round tip. Have to say they were all adorable, but my favorites are those coated in confectioner sugar...they took on this grayish effect after sitting a while. Using them on a cake. With a fork, I dug a bit of cake out and placed one of the little varmints with his nose close to it. And the chocolate sprinkles are so like droppings! Again, so fun - can't wait to show it off!

Chicken Boston

Wow! What a change of pace for flavor! Weather too hot to use the oven, so made it in the crockpot. Chicken breasts turned out wonderfully moist and tender...made a very nice gravy while cooking. I skillet-browned potatoes before adding to crockpot later. Will definitely make again!

On the Go Casserole

This was very tasty meal which used ingredients I usually have on hand. I didn't use hot sausage, but added red pepper flakes for individual plating as desired. This also held and reheated quite well. We will definitely enjoy this recipe again.

Enchilada Meatballs

I used ground turkey vs ground beef. These were quite good and simple to make. A good spicey flavor, but not overly so. I sprinkled chopped onion over the meatballs when they were nearly done and then sprinkled with grated cheese. Served with guacamole and cole slaw. Will definitely make again.
