Garlic Parmesan Orzo

This was almost restaurant quality. I made some changes to reduce the fat. Instead of using butter, I sprayed the pan with butter flavored spay and poured some liquid fat-free butter spray into the pan. The garlic sauteed just fine. The end result was great. It wasn't as creamy as I would have liked, but that was due to the butter substitutes. I don't mind giving up a little creaminess for getting rid of all that fat.

Cream of Cauliflower Soup II

I tweaked this just a bit. I used fat free half & half instead of milk, I threw in a couple slices of boiled ham, and I added some water as it seemed too thick without it. It came out very tasty!

South Beach Meat Loaf

My mom and I are on the SB diet and neither of us liked this at all. The sauce was bad too. I hated to do this, but I had to dip it in ketchup just to get it down. Won't be making it ever again.

Pumpkin Crescent Rolls

My family and I thought they tasted pretty good, but they didn't come out as crispy or flaky as I would have liked. I think it would be a good idea to use the same amount of jumbo rolls instead of the regular size ones. It would help a lot keep all the filling in. I would make them again.

Rachel's Cream Cheese Fruit Salad

My very picky son loved this recipe, as did I. I did just sprinkle the pretzel crumbs on top of the portions that I served, and it did taste better that way than without the pretzels. A great way to get my son (and myself) to eat lots of fruit.

Mrs. Sigg's Snickerdoodles

For some reason these cookies did not flatten. They looked like balls that were cracking open. I followed the recipe exactly except that I used Splenda For Baking instead of sugar. Maybe that's why.(?) Also they tasted a little dry. I didn't overcook them, so they did not burn. Can't help but think that maybe I did something wrong.
