Cheddar Sandwich Souffle

Ho hum... not much to talk about here. I increased the mustard to 1 t., added 1/2 t. of minced garlic, used 2 egg whites & added a few slices of canadian bacon on top of the bread - still too much work for too little reward. IF I made it again, I might double the eggs & use all the whites, & double the cheese (plus my other additions) for 6 pieces of bread. Then it might be better.

Raspberry Vinegar Chicken Breasts

This tastes great. I made a few substitutions though. I only had rasberry infused balsamic vinegar, so I used that & decreased the amt. by 1/2. I added some garlic, too. I also used 1/2 & 1/2 instead of heavy cream and, sadly, it curdled. We ate it anyway, and I'm not quite sure why it curdled-I let it cool quite a bit before adding the 1/2 & 1/2.

Cheddar Puff Biscuits

I doubled this recipe & it turned out great. Only thing I'd change is add 1/4 t. salt (or instead of garlic powder use garlic salt). They flattened out more than I expected they would after coming out of the oven, but still tasted great. Make sure the pan is well greased, mine stuck somewhat where the cheese bits touched the pan.

Nut Rolls

I've made this several times and it's always a huge hit. This year I modified it somewhat. Filling: Substituted dark brown sugar and pecans. Used 1 Tablespoon cinnamon and 1 Tablespoon vanilla. Dough: Increased sour cream to 1 Cup and added 2 extra egg yolks (reserve 2 whites for the wash). Let dough rest/rise for 30 min in a warm spot. Be sure to roll the dough very thin to about an 8 x 12 inch rectangle. Use 1 Cup of dough and 1 1/2 to 2 cups of filling for each roll. I get 6 rolls this way.

Butterscotch Lace Cookies

I used dark brown sugar so I eliminated the molasses. I'm glad I had a silicone sheet to use, so they didn't stick, but they look like they could have stuck a lot on an unprotected cookie sheet. The taste was just so-so, very crisp and rather candy-like lacy edges, but the center tastes just like oatmeal with brown sugar on it. I dunno, I just expected it to taste yummier somehow.

Original Irish Cream

Super yummy! I also used 1/2 & 1/2, my husband said, "Yea-now we don't have to spend all that money. We could pour this in the other bottle and nobody would know the difference." I'm not so sure it tastes exactly the same, but its close enough for us. We'll definitely make this again.

Mexican Corn Bread

I halved this recipe to make for my family dinner. It was delicious! I left out the jalapenos just so my little one would eat it and added pimentos instead. Everybody loved it - quite moist and dense.

This was really delicious. I marinated in a zip close bag for 4 days, used lots of onion and skipped the rest of the veggies. On Day 5 I put it in the crock pot on low for 8 hrs. When it was done to the point of falling apart, I removed the meat from the pot, and stirred into the leftover juices: 3/4 C crushed gingersnaps, 1/4 C. brown sugar and 1 C. sour cream to create the traditional gravy. YUM!

I liked this recipe. The onions were definitely sweet and somewhat chewy. It was a nice change from the way I usually fix salmon. I probably should have added extra vinegar for more tang.

Salmon Patties III

These were awesome. I doubled the recipe since I had extra salmon. My friend came over for dinner with her 2 toddlers - they ALL loved it - and my friend initially said no thanks, I don't like fish. Quick and easy to make, too. I also skipped the corn flakes & just used breadcrumbs.

Three Cheese Chicken Bake

Based on other reviews, I added an extra can of soup. I also added in about a cup of peas to brighten it up a bit more, and added 1/2 t of Penzey's Basil Seasoning, which added some extra flavor. I mixed the parm in with the breadcrumbs for the top. It's a heavy dish and it did come out creamy and cheezy. I might make it again some day.

Russian Cabbage Borscht

This was so yummy. I chopped the potato, beets & cabbage to a chunky dice, used chicken broth and diced a tomato and added 8 oz. of tomato sauce rather than puree. It barely survived long enough to become leftovers.

Peach Pie

OK, I hereby swear that I will never again make a recipe w/out reading the reviews first. The crust was seriously undercooked and the only thing that saved this pie is that the fresh peaches I used were wonderfully sweet. Next time I will add - 2 t. cinnamon, 1/2 t. nutmeg, 1 t. vanilla, and bake the first 15 min. @ 450 deg then bake another 45 min. I believe the bottom crust should have been baked before adding the filling, too. Oh well..

Creamy Banana Bread
