The Best Vegetarian Chili in the World

This really is great! I used 2 28oz cans of tomoatoes, and that was plenty. I also ommited the veggie burger crumbles because I wasn't sure how well this taste would blend, and there was plenty of texture with the beans and corn. This will be in the frequent rotation, and worked great in the Corck Pot.

Mom's Rum Cake

I tried to find faults with this cake since it was so easy, but no luck. I used 70 proof spiced rum which kept the alcohol from being overpowering, and added a aromatic Caribbean flavor to the cake. Rum=Good, Cake=Good, This Rum Cake=The Best!

Classic Cuban Midnight (Medianoche) Sandwich

My deli did not have pork to thinly slice, so I roasted a pork loin fillet seasoned with just salt and pepper and sliced it into thin cuts. I used brown sugar deli-sliced ham and sandwich-sliced Tabasco pickles. I used a cast iron skillet to press the sandwiches and found medium heat worked best (rather than medium-high). Tasted truly authentic! Can't wait to make again!

Red Skinned Potato Salad

The best potato salad I have ever had! Per the suggestions, I used 1 cup sour cream and 1 cup mayo for the dressing. I also used 3/4 lb bacon, but thick cut (less fat, more meat). Also used red onion, which added a little bite. Thanks for the recipe Donna!

Burrito Pie

I love Mexican food, and this recipe is at the top of my favorites. I misread the recipe, and only used 1/2 the amount of taco sauce. I think I would keep this mistake in the future as the consistency turned out perfectly. I did add a couple of dashes of ground red pepper, and a few shakes of the hot sauce to the meat mixture, but I love spicy. The recipe as it stands is probably spicy enough for most.

Gyroll

It was edible, and something different, but will not make the recipe rotation. It's not in the same class as a true Gyro. The dough on the bottom and that rolled inside was too doughy, and the garlic powder sprinkled on top gave a burned garlic taste. I'm sure this recipe has potential, but I will not make again.

Meatloaf with Fried Onions and Ranch Seasoning

Best meatloaf recipe I ever tried. My wife is not a big meatloaf fan, and loved it. I used a whole packet of dry ranch dressing mix, and reserved 1/3 of the french fried onions to sprinkle on top during the last 10 minutes of cooking. Perfect!

Pepperoni Stromboli

Very easy and delicious. I sautéed a small onion, 2 cloves garlic, and 1/2 TBS of italian seasoning to add to the cheese/pepperoni filling. I only used 1lb of refrigerated pizza dough. I put the filling in, and rolled it up like a traditional stromboli. I'm sure the braiding would have been decorative, but I didn't want that much bread, and wanted to make this an easy recipe for a weekday.

Spanakopita (Greek Spinach Pie)

Turned out perfectly. I used 6 phyllo sheets on the bottom, 4 in the middle, and 6 to top it off. I used butter to brush each sheet instead of olive oil to enhance flavor. I also added a couple of dashes of ground red pepper and seasoned salt to the onion/garlic mixture while cooking. Will make again!

Anniversary Chicken I

Average recipe. Easy to make, but if it took any more time, it wouldn't be worth it. Chicken was a bit dry. Maybe covering while it cooks would help, but I think a light suace would make it better.

Barbeque Pork Two Ways

Great BBQ pork recipe. It's easy in the slow cooker, and makes for great leftovers. I used pork sirloin and shredded after cooking, added the 1/2 ketchup, 1/2 BBQ sauce combo and threw it back in the slow cooker for an hour or so on low. Served on Miami Onion rolls with provolone. OK, so it's not traditional, but tasty nevertheless.

Quick Brownbag Burritos

I normally take a salad to lunch everyday, but that can get pretty boring after awhile. I really enjoyed these for a change-up, and they were easy to make ahead of time. If you like it spicy, throw a few jarred jalepenos in each burrito for a crispy texture and some heat.

Amy's Garlic Egg Chicken

This was OK. I love garlic, but I might omit the garlic powder in the breadcrumb mixture, and just stick with the cloves used in the marinade. It wasn't my favorite recipe for chicken, but not bad as a quick dish. I would probably use the chicken in a salad next time as others suggested, rather than by itself.

Barlow's Blackened Catfish

I followed the recipe exactly, and the heat was perfect for my wife and I, but we like heat. She wasn't wild about the italian dressing taste, so next time, I'll try baking it with a drizzle of olive oil and lemon juice. It was slightly salty, and I like salt, so it may make sense to halve the salt. A great fish recipe!
