Gorgonzola and Apple Pork Chops

Wonderful taste. I however like to put it on top of the pork instead of stuffing it, but I find cooking butterflied peices of meat a little harder to work with! I cooked pork in olive oil, fresh garlic and put a little bit of dried rosemary on them during cooking. Gave the pork a little something extra. I also added the sugar and a bit of ff cream cheese to keep the gorgonzola from stiffening once it was out of the pan!

Last Minute Chicken Dinner

Great spices. I found that it is better and less mushy if you boil potato cubes and then spoon the sauce over top instead of adding it in with the cooking.

Chicken, Garlic, and Sundried Tomato Pasta

I give this 4 stars with the recipe as is, but I make changes to it! CHANGES: 1. 1 tsp black pepper during cooking (instead of 1/4) 2. Add 1-2 cups of chopped up fresh spinach after mixing sauce with pasta. Heat just enough to warm spinach just before serving. 3. Change pasta from farfell to penne. 4. Swap out parsley with Italian seasoning for more flavor.

Greek Penne and Chicken

I really enjoyed this. Most recipes I change, but this one I didnt (much)... I don't like onions so I omitted those and I added the feta cheese AFTER the pasta was done and in the bowl, but overall I really enjoyed this recipe!

Blackened Shrimp Stroganoff

Fantasitic! I loved this guilt free pasta recipe! My husand and I couldn't get enough. I did leave out the red peppers and the capers because I don't like them, and we used fat free chicken broth and sour cream to reduce fat content. The changes were mainly because this recipe that is suppose to serve 4, only fed us two. We DRENCHED our pasta in this wonderful creamy sauce that didn't have a bunch of heavy creams or fat!

Chicken with Shrimp Sauce

YUCK...The sauce was so thick, I could have spackled the wall with it!!! 1/2 cup of flour was just way too much. Cardboard has better flavor. I tried to follow the recipe, but in the end couldnt save it. What a waste of ingredients!

Amaretto Shrimp Almandine

My husband LOVED this! I personally thought it was a bit too sticky and sweet but overall liked the flavor! He DEVOURED it. Next time, more amaretto, less honey (we also didnt catch anything on fire, we just ate it the way it was)!

Warm Crab Parmesan Dip

Wow! Changes: Doubled Crab, Added a can of chopped artichokes, used fat free sour cream - cream cheese and mayo. This helped curb the calories because we (me and my husband) DID eat the entire thing (by ourselves)!

Pesto Tuna Salad with Sun-Dried Tomatoes

Yum... I also used low fat stuff and dried tomatoes instead of oil packed. We served it on toast with tomato soup! It was REALLY good!!!! We actually make a large batch of this using an entire container of pesto and 5 cans of tuna - then freeze it and pull it out when we want it. This is a REGULAR in our house. This is that one recipe that we are so thankful for! Trying 100 recipes to get this one was well worth it!

Eggplant -- Easy, Good and Tasty

Nice.. We loved this recipe. I did make some changes as suggested by others. The drudging in flour before putting in the egg mixture (to which I added garlic powder). And instead of baking, I actually fried it with some olive oil (due to time constraints). I took this to lunch with the inlaws and they loved it (even my sister in law liked it until we told her it was eggplant - she is stupid like that). We will definately make this one again!
