I just recently got married so now that all of the chaos is over, I am enjoying getting back into my routine of having time to cook. I have always loved to cook, now even more since I received A LOT of kitchen gifts from my wedding registry! I'm not a huge meat eater so I like finding new vegetarian main dish recipes on
My favorite things to cook
LOVE to cook Italian food - I have mastered homemade pasta sauce and garlic bread. I also make an amazing Mediterranean Pizza. I also like to make things that my husband can grill. My favorite would be grilled romaine hearts...I duplicated a recipe from a favorite restaurant of mine but found some similar ones on this site. So yummy!
My cooking triumphs
Finding new uses for food staples we buy. My most favorite is using whole wheat tortillas as pizza crust. I love thin crust pizza and it is lower in carbs than traditional crust.

Chinese Napa Cabbage Salad
I just finished making this and it was just as amazing as the Oriental Salad I order at Kona Grill. I used cole slaw bc my store didn't have napa cabbage, half the butter when cooking the ramen noodles and only half the flavor packet to try to cut down on the sodium. Only used 1 tbsp sugar instead of two and I think it tasted perfect. Will definitely be making this again.

Spinach and Potato Frittata
This was a very easy recipe. I used Simply Potatoes to speed up the potato cook time, seasoned with Lawry's and pepper. Used a container of egg beaters instead of milk and eggs and added tomatoes when I put the spinach and onion in. I put this in oven at 350 after letting cook on the burner for about 5 minutes. I didn't have a lid big enough for my skillet to cover it.

Fiesta Dressing
I didn't have a can of rotel so I used chunky salsa. Very yummy.
