Sesame Seared Tuna

No need to alter this recipe because it is perfect as is! The key is to not over sear it. I sear only about 30-45 seconds each side and it is perfect. My wife insists that it be served with Japanese-style sesame green beans also found on Allrecipes. BRAVO!

Mexican Shrimp Cocktail

Wonderful! I substituted ketchup and tomato clam juice for SPICY V8 juice and straight clam juice. I also added a TON of finely chopped fresh celery and double the avacato (adding it right at serving time)so we could use crackers for dipping. This was such a huge hit that my wife took the leftovers to her staff meeting the next day and now I have to send it weekly to her staff meeting. Thank you for the fantastic recipe.

Cocktail Sauce for Shrimp

Don't be afraid of the spice. I added lots of extra hot sauce and my whole family loves it! My wife will not eat shrimp anymore unless I have this to dip it in. The horseradish is perfect, and the key to this recipe. FANTASTIC

Calamari in Red Wine and Tomato Sauce

Fantastic! My wife loved this recipe even though I thought there was too much sauce. I cooked the calamari only about 6-8 minutes so they wouldn't get tough. There was enough sauce left over that I saved it and used it the next day (adding canned clams) to make a fantastic red clam sauce for pasta. My wife asked me again today when I am making this again...I guess it will be tomorrow.

Mango Salsa

You have made me a hero with my in-laws! My family loves this so much that I made it for my In-Laws when we went back for a visit. I always add triple the jalepeno peppers, my Mother-in-Law hates spicey food but loves mango so she couldn't eat it ;) but the rest of the family loved it. Thank you!

Ronaldo's Beef Carnitas

WOW! This has become a family favorite. I always add 2-3 times the amount of cumin because my family likes stronger spice, never-the-less it is requested at least every 2 weeks. The leftovers are always used by my boys the next day for burritos or even on buns as mexican sloppy joes.

Red Snapper Livornese

Left out the olives (my wife doesn't like them)and added extra crushed red pepper and it was perfect! This really can be used with any firm fish we have had it with Snapper, swordfish, Mahi mahi and it is tasty everytime.

Rib Eye Steaks with a Soy and Ginger Marinade

This is a great recipe! The only thing I changed was to add extra ginger and spicy sauce and this was perfect, My oldest son, who doesn't eat much steak, said that if I cook his steak like this, he will eat steak every time I cook it.

Scallop Stir-Fry

Great blend of flavors. I used fresh ginger and doubled the garlic and I also used grapeseed oil instead of canola oil (that is all I cook with), otherwise made no changes and the whole family loved it!

White Bean 'n' Ham Soup

Fantastic recipe for when you need a hearty soup don't have the time to boil the beans. I made this triple the recipe to use all our leftover Thanksgiving ham and it took about 10 minutes. My family loved it and the leftovers were even better. It is so simple that you safely alter it however you desire to meet your own preferences.

Ginger Crab Cakes

Ginger is critical to this recipe. It was a complete hit, but since my family likes spice, I added extra ginger. Take care in turning tthe cakes as they are very fragile until turned at least once.

Chicken Breasts in Caper Cream Sauce

This has become a regular for my wife and me. There is nothing to change with this recipe it is perfect as is. Be careful this the temperature as it is easy to turn the sauce brown in the heat is too high, doesemt change the flavor jus tnot as appealing to look at.

Cajun Crawfish and Shrimp Etouffe

The first time I made this, I got so excited because the sauce after I added the tomatoes and fish stock was to die for. I used boxed fish stock and it was amazing, I added some frozen crawfish meat and shrimp and the frozen crawfish meat ruined it. I was sooo disappointed. The second time I made this, I used clam juice with some fish sauce (used in oriental cooking) and omitted the crawfish meat (since it is hard to get fresh stuff where I live) and added diced chicken and it was again amazing. I usually like to play with the recipe a little but there is no need to with this one. It has become a new family favorite and I actually enjoy making the roux.

Greek Lemon Chicken Soup

Great Recipe!! The only change I have made is to add more white pepper for a little more heat as is our preferrence, and omit the flour completely. It seemed to make it too thick and not as I remembered my Greek Grandmother used to make. By omitting the flour, it tastes exactly like what I remember in my youth. . . PERFECT

Cajun Red Snapper

One of our favorite fish, and a great recipe for the spicy cajun lover. I substituted grape seed oil for the butter as it has a much hotter splatter point so foods tend not to scortch on the outside while not cooking in the middle, (a lot more healthy than butter or even olive oil too).
