Grilled Salmon Skewers
This is fantastic! Simple to make and wonderfully tasty. I found the recipe a few months ago and have already made it 5-6 times! It's almost like candied salmon - but not that sweet. I did have difficulty getting 12 skewers out of a pound of salmon but it really doesn't matter how many you have as long as they're all about the same size so they cook evenly. On the one occasion we had a few skewers left over, I stripped off the salmon, mixed it up with a little mayo and had a great salmon spread for crackers as well! Thank you, thank you, thank you!

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce
Fantastic! Maybe I'm more comfortable in a kitchen than some but I couldn't figure out what all the whining was about regarding the prep for this dish. Sure you have to chop up a bunch of stuff but once that's done, everything goes together easily. I started the sauce while the stuffing was cooking and everything was set when the steaks were ready to be stuffed and sauted. We've even prepared this dish ahead of time (all except cooking the meat) and brought it over to a friend's house and completed it there. The stuffing was great and the whikey peppercorn sauce was incredible. My husband lurked around the kitchen and could not believe there were no mushrooms in the sauce as it was reducing. It smelled great and tasted even better. My only advice is to precook the bacon for a few minutes (4-5)in the microwave to prevent it from being soggy if you're cooking the filets to medium rare.

Spinach Stuffed Chicken Breast
After reading all the reviews I simplified the recipe slightly by using about half of a 10 oz. frozen package of spinach (well drained), cut the garlic down by half and added a bit more cheese. I precooked the bacon for about 4-5 minutes in the microwave and then placed two strips in an "X" over the top of the stuffed breast and tucked the ends underneath - no need for toothpicks. With 3-4 minutes under a broiler to finish off the bacon and a light sprinkling of more shredded cheese over the top, these were fantastic! Simple enough to make for the family, elegant enough to serve to company. Wow!
