Cathie's Clam Chowder

Wonderful chowder with a couple of minor modifications to suit our preferences. I appreciate you posting this recipe as I'd never made a creamy chowder before, and needed a good, basic guideline & procedure to follow. I cooked the chopped onions and diced bacon in a few tablespoons of melted butter, then added a couple of tablespoons of flour thus creating a roux. Otherwise, I followed the recipe, but omitted water and substituted more clam juice instead, doubled the potatoes. After the potatoes were cooked through in the clam juice, I reduced the heat to a low simmer, then I added twice the amount of clams (I used half minced clams and half chopped clams), and used 1 quart half & half with about a pint of heavy cream. I stirred it often making sure the cream wasn't allowed to boil. I threw in a couple of tablespoons of dried parsely, and a couple of teaspoons of dried dill weed. I served this at a potluck with fresh french bread, and got huge raves, and lots of recipe requests. Thank you!!! 07/15/2012: Made this again last night...just delicious! I've found that precooking the bacon til crisp then adding to the roux of butter, onions and flour makes a huge difference. Also, replacing all water with clam juice adds great flavor.

Spinach Tomato Tortellini

Country Apple Dumplings

These are fantastic. I made them for a Christmas gathering and everyone wanted the recipe. I loved telling them that there was Mountain Dew in it. No one could believe it. Awesome for so little work. Followed recipe exactly!

Champagne Shrimp and Pasta

Delicious! I doubled this recipe - 1-1/2 lbs. penne pasta, 2 pkgs. fresh mushrooms, 2 lbs. shrimp, etc., but also used 6 plum tomatoes. I also used a bottle of Korbel brutt (3 cups). The only thing I would do differently is not add that last 1/4-1/2 cup of remaining cream. Great Flavor - loved it.

Caesar Salad Supreme

Very good. Followed the recipe exactly except I didn't make the croutons. I also added breaded chicken. The dressing is delicious. I was nervous about the anchovies because I'm not a fan, but it turned out great. Very garlicky. (I love garlic).

Sugar Coated Pecans

I make these with 1/3 pecans, 1/3 cashews and 1/3 almonds. I also heavily grease a baking sheet with lots of butter. So good.

Broiled Tilapia Parmesan

1/2 C Parmesan 1/2 C Garlic & Herb Bread Crumbs 1/4 C Butter Softened 3 T Lite Mayo That's It! Fantastic I've tried this recipe the original way and this way with bread crumbs. Definately like better with bread crumbs.

Surprise South Beach Mashed 'Potatoes'

I used a whole head of cauliflower and steamed it till really mushy. Added one ounce of butter spray and mashed with potatoe masher. I like it lumpy not creamy. Put a serving on my plate and stuck a piece of Lite Laughing Cow Cheese in it and mashed and mixed it in. Delicious!

Silver's Savory Chicken and Broccoli Casserole

Don't change a thing! We loved this. I used cheddar and mozzarella instead of provolone because that's what I had. Baked at 400 for 20 min. and then another 10 min. at 350. Mixed milk with flour first and then added to cooked onions. No lumps. Then added chicken broth.

I added a pkg of Ranch Dressing Mix to the 1 cup of flour. I also used PAM in one batch and for another batch I just coated the pan with olive oil. Both tasted great.
