Baked Kale Chips

Addicted! Why haven't I made this sooner? I made this twice. For my first batch, I didn't dry my kale thoroughly enough so it ended up steaming. I left it in the oven a bit longer to crunch it up more, but it was still half soggy half burnt. For my second batch, I dried the kale overnight; skipped the parchment paper; rubbed the oil into the leaves with my fingers. Baked for 10 mins. Absolutely perfect. Nice and crunchy.

Chicken Fettuccini Alfredo

All I can say is do not make this with almond milk. Definitely use the milk and half & half as suggested. My cupboard was bare so I also substituted the colby jack with italian five cheese. Oh my goodness. It was horrible. I'll have to try this again with the ingredients as suggested. The chicken fried in the italian seasoning by itself (before mixing it in) tasted horrible on its own; I was expecting it to taste nice, but maybe I did something wrong.

Swiss Steak Quick and Easy

Quick and tasty. I added some red wine to deglaze as suggested by others. Cooked it entirely on the stovetop. Doubled the sauce so that there was more to go on the noodles. Mine still needed a little more flavor so I added some beef stock and tomato sauce.

Spicy Crispy Beef

Tastes as good as a dish from PF Chang's restaurant. I changed it up a bit. Sliced the beef sirloin super thin; turned out very tender. Added broccoli instead of peppers. Served it with siracha sauce for a bit of a kick. Delish!

No-Noodle Zucchini Lasagna

Way too runny. Although it's full of vegies and good for you, my husband and I ate it but didn't care for it much at all. The zucchini needs to be almost grilled in the oven to remove some moisture. The mushrooms, onions and spinach also added too much liquid, maybe they should be sauted in a pan first and liquid removed?? The ricotta was nice but not enough for the layers. As for flavor, there wasn't any. Very bland. I think this recipe has potential, but needs some adjusting.
