Cheese Ball I

This is delicious exactly as written. I wouldn't cut back on the cheddar as others have suggested - it is after all a "cheese" ball. Also yummy with a couple cans of drained crab meat mixed in.

Jalapeno Cream Cheese Chicken Enchiladas

OH MY GOSH ... these are so good!! Two of us polished them off in one sitting! I have never made enchiladas before, but definitely will again. The only thing I did different was I used the meat from a rotisserie chicken I had bought and then didn't use for dinner the night before and I added a can of black beans to the mixture. We also had sour cream on the side. Yummy!

Slow Cooker Lentil and Ham Soup

Easy and excellent soup especially on a cold day. I didn't have time to wait all day for it to cook so just simmered it on top of the stove for a couple hours and it turned out great. This recipe is very forgiving and you could add/substitue/reduce ingredients easily. Rather than opening a jar of tomato sauce for 8 tsp I just used an 14 oz can of diced tomatoes and bumped up the ham/veggies to account for the extra liquid. Delicious - even better the next day!

Peppermint Meringues

Typical meringue recipe - quick to make and easy. Like the idea of addding peppermint extract. However, doesn't make anywhere near 48 unless they are very small.

Dumplings

I only gave this 2 stars because the taste was okay. We like our dumplings light and airy and these were far from it. I made sure to follow the recipe exactly and they turned out so thick and heavy. Definitely won't be making these again.

French Ham Cheese and Egg Fondue Casserole

Flavor was good, although I found there was way too much ham. Weirdest part was the texture. It was well cooked, but still was just mushy bread. A quiche would give you the same flavors without the wetness and it is much easier. Not likely to make again, but might try using hash browns instead of bread.

Strawberry Cake from Scratch

The strawberry gelatin gives this cake an artifical taste. I could have gotten the same from a cake mix without all the extra effort.
