Turkey Pot Pie I

this recipe was good. although, right after adding the oregano, i thought... i should have added something else - like thyme or savoury or sage - a spice/herb that goes well with turkey. alas, it was too late, and i wasn't a big fan of the oregano taste it had... yet everyone else that tasted it LOVED it. i also replaced some of the milk and chicken stock with cream of mushroom soup - condensed. just a thought. it was also very easy to make. will definitely make again. thank you.

White Chili with Ground Turkey

varied the recipe quite a bit where it was no longer "white" (added red wine in place of one cup of chicken stock, ground chili in place of chile peppers, some tomatoes, curry, brown sugar, corn and substituted black beans in place of cannellini beans) but it still came out really well. the brown sugar was only added because i put too much chili - sweet to counteract the hot. the cinnamon is a lovely accent and you absolutely cannot forget the monterey jack cheese. wonderful blend of flavours. it did initially look watery, but i let it simmer for a good 30-45 mins longer than requested.

Alice's Sour Cream Chicken Breasts

thought this was excellent. yummy. did not put in the microwave; rather cooked the chicken in a pan with a little olive oil, at the same time mixed all the sauce ingredients in a bowl. took chicken off the heat JUST before it was done and sliced it then put it back in the pan and poured the sauce over it. let it simmer for a good 1/2 hour - be patient... it WILL thicken. it was not bland at all! you have to let it reduce to concentrate the flavour.

Dad's Excellent Scallops

these were yummy! i would cut down on the prosciutto just a little. one slice to one scallop was a little too salty for me. maybe just half a slice.

Artichoke Spinach Lasagna

wonderful idea for a recipe. i personally did not like it, but i think that was because i decided to use a jar of tomato sauce, rather than making my own (being of italian decent, this probably would have been a better idea). just an "fyi" to those of you, like myself, that are picky about your tomato/pasta sauces. also, the next time i make it (and i will make it again!), i will probably substitute the feta cheese for a parmesean or asiago.
