Baked French Fries I

These were really good -- I had no complaints last night! I did add some sea salt and ground black pepper. I cut mine in wedges and cooked them just a little longer than 45 mins (they were cooked through but still a bit soft and not yet crispy at 45). Everyone liked them. I definitely recommend.

Scrambled Egg Muffins

I cooked breakfast for a few friends this morning and was trying to think of something to do with eggs, green pepper, and onion. Voila! I had lil Smokies on hand, rather than the typical breakfast sausage, but those diced up worked just fine. Everyone loved these and they were SO easy to make for a group! I served them with optional sides of ketchup, salsa, or hot sauce.

No Bake Cookies I

For once I was trying desperately to follow this recipe exactly so I could give it a fair rating! Unfortunately, I discovered I didn't have any vanilla extract, so I had to substitute almond extract. I think these were still delicious. They are definitely SWEET. Don't expect otherwise and you won't be disappointed!

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair

Green Bean and Feta Salad

Awesome Chicken and Yellow Rice Casserole

I honestly did not think this was that amazing. It could have been heated together on the stovetop, no need for the Dutch Oven or the casserole dish. If I could make it over again, I would use only breast meat, but that's just a personal preference. Overall, this was just kind of "there" to me -- not great but not bad either.

Herb-Stuffed Red Peppers

These were SO GOOD! The only thing I added was a bit of chopped jalapeno, and a bunch of extra cayenne pepper because I like my food spicy! I will definitely make this again.

Chicken with Red Grapes And Mushrooms

This was delicious -- probably one of the best recipes I've made thanks to Allrecipes! I used more mushrooms than the recipe called for (a whole large container of sliced mushrooms). I also used a little flour to thicken the sauce, as other reviewers suggested; that worked perfectly. I also used white cooking wine instead of red, and I served the dish over egg noodles and with a green veggie side -- yummy!!!

Pepper Rice and Confetti Beef

I made this last night with a few alterations. I did not have any beef, so I used chicken. I also did not finely chop the peppers, but instead kept them in larger chunks. I added onions to the vegetable mixture, which I also seasoned with a bit of garlic powder. Finally, I cooked instant white rice like normal and doubled the honey mustard sauce.

Yummy Veggie Omelet

This was the first omelet I have ever made, and it turned out wonderfully! It was so yummy. I added fresh spinach to the top of the sauteed veggie mixture and let it steam until wilted under the pan lid. I also loved the technique of lifting the edges to get the uncooked parts to run to the side and cook -- it was much easier than trying to flip or, worse, folding the omelet over and serving prematurely! :)

Grilled Corn on the Cob

This was my favorite item at our cookout yesterday. After taking the silk off the corn (with the husks still attached) soak them in cold water for a couple hours; then you won't have to wrap them in foil but can cook them directly on the grill. YUM!

Blue Cheese Stuffed Mushrooms with Grilled Onions

I felt there was something missing from these, which I made yesterday for the 4th. Everyone else liked them, but I thought the mushrooms themselves seemed kind of bland (despite the blue cheese inside).

Mango Salsa

This was yummy. I tried to see if I could alter this slightly to make it more like a mango salsa recipe given to me by a Brazilian woman. (I lost the recipe!) I substituted red onions for green and added a dash of white vinegar and some avocado (just because I had one on hand). I also added some garlic powder and salt. Everyone liked it, but to me there was just a tiny something missing, and I couldn't quite put my finger on it.

Elegant Orzo with Wilted Spinach and Pine Nuts

I made this recipe for dinner tonight and really enjoyed it. I made just a few alterations, and used extra of all the herbs, and a bit larger drizzle of balsamic vinegar. I added a bit of chicken boullion with the herbs/oil/butter mixture, and I did not have orzo pasta so I just used angel hair (still yummy with it!). I also didn't have quite half of a tomato, but I used what I had on hand anyway. Instead of fresh garlic (which I also didn't have) I used garlic powder, and at the time you would normally saute the garlic I sauteed red onion as a tasty addition to the recipe. I also added the chopped tomato to the wilted spinach mixture right before tossing it with the pasta, to warm the tomato slightly. So yummy! I'll definitely recommend this to friends.

Ginger Glazed Mahi Mahi

I agree with a previous reviewer; this fish would be better prepared with a lighter, fresher method of cooking. This glaze would be good on chicken or wings...it seemed to overpower the fish and I couldn't really enjoy the flavor. I'd rather do something with lemon and fresh herbs next time, for example.

Oven Roasted Red Potatoes and Asparagus

I made this recipe last night and loved it. I just eyeballed the spices and I didn't have any rosemary so I just threw in some things I thought would taste nice. It came out wonderfully.
