Blueberry Flax Pancakes

Very easy and very good. I did stir the blueberries directly into the batter and they still turned out great! The only thing I didn't like was the partially hydrogenated oil in the pancake mix (hubby bought it). Hopefully I can find a good organic mix so it's ultra healthy!

Brown Sugar Meatloaf

This is really good! I followed another reviewer's suggestion and put the sugar and ketchup on top because I like my ketchup baked. I also used dried bread crumbs as I didn't have any crackers. My kids who hate meatloaf even asked for seconds! :)

Apple Tuna Sandwiches

I can't believe this would get anything lower than a 5, but that's just my opinion! I LOVE this stuff! I have a hard time not eating the whole batch in one sitting. :) And I feel good about what I'm eating! I don't change a thing. This recipe is perfect!

Rhubarb Cake III

Mmmmmmm, nummy! This is excellent. Still warm from the oven, and delicious. Would be good with some vanilla ice cream. I wouldn't have minded more rhubarb, but I used all that I had. Probably had more than the recipe called for too! :) I love rhubarb. The only changes that we made were: omitted nutmeg, almonds and coconut. (I'm out of nutmeg and almonds and my son didn't want coconut in it.) I also added 1/2 cup of flax meal for added nutrition. Oh, and I didn't have any buttermilk, so I added 1 tsp. vinegar to 1 cup of regular milk.

Amy's Garlic Egg Chicken

This was pretty good. I did modify the recipe per other suggestions. I used more egg yolks because 1 didn't seem to be enough. I used a little less fresh garlic than called for. I halved the breading and still had about 1/2 cup left over. I did not add the garlic powder. I thought that would be WAY too potent! Watch out vampires! And I didn't think that it needed a whole Tablespoon of pepper and a half Tablespoon of salt. I used teaspoons instead. (I wondered if that was a misprint.) Aside from the modifications, this recipe was pretty good. Nothing to rave about, but worth making again someday.

Aussie Chicken

I have made this numerous times now for my family and we love it! I don't usually plan ahead very well, so I don't do the seasoning salt step. I also don't like mushrooms, so I leave those out. It always tastes wonderful! It's easy too! We have tried it with mozzarella cheese and also cheddar. Yummy as usual!
