Black Bean Spinach Pizza

This recipe is absolutely great!!! I didn't have any frozen spinach on hand (plus I thought hubby wouldn't approve anyways), so used a can of mushrooms instead. Still perfect! Our dinner guests couldn't stop saying how good the flavor was. Both hubby and daughter thought this was superb.

Broccoli with Garlic Butter and Cashews

This is a great broccoli recipe. We grew broccoli this past summer and this recipe is a great way to keep up with the abundance. I half the amount of butter called for, with terrific results. My family isn't big on nuts, but DH does love pecans, so that's what I use.

Salsa II

This is the salsa that you will keep making! All my friends and family who have tasted it love this salsa. For chopped tomatoes added to the mix, I like to use chopped cherry tomatoes. I like to sprinkle some sugar in the mix as well. 6 jalapeno peppers are about the right level of spiciness for me.

Slow-Cooked Chili

This is the first time that I made chili, but thanks to the great recipe I hit a home-run! Instead of 2 cans of diced tomatoes and 2 cans of tomato sauce, I used 1 can of diced tomatoes, one 6 oz. can of tomato paste, and 1 home-canned stewed tomatoes with great results. Added cumin. Ran out of chili powder; probably only used half of what's called for. I used venison hamburger meat. It was very good. No gamey flavor whatsoever.

Corn and Zucchini Melody

This is a great way to make good use of the summer vegetables grown in your garden! Sometimes I also add chopped green beans and grated carrots into the mix. You can pretty much put in any veggies you have on hand and it'll turn out nicely.

Bucket Salad

Very easy to throw together but oh so good! This was my first time to make a taco salad, and I'm happy to report that I've found a keeper. Even my picky DH gave the verdict of "World-class taco salad!" I wanted to serve it with Beef Enchiladas, so I decided to omit the ground beef in the salad. I also put the tortilla chips on the side, in case some of our dinner party prefer to not have any chips in their salad. It tasted great: just like what you get at a regular Mexican restaurant!
